What a turnout for our pre-order BBQ boxes at Kelly's Meats this evening Tooradin, it was hectic but we got it done

Almost 130 people fed in just under the hour

Hopefully the line moved fast enough 😁

I got no pics of much at all, as everyone showed up nice and early, 530 was just a touch early for setup, so maybe 6pm next time

My Pork Belly Rack nailed this beautiful slab of belly last night

And I'll admit, it wasn't the BBQ this time, as I was short on time

So the oven was cranked to 230-240 Celsius, in went the rack, in went the belly, and 60 minutes later we had this beautiful, crispy, golden, juicy slab of pork belly

Whipped up a fresh Vietnamese salad, and happy days!!

So, whether you use the Pork Belly Rack in the oven, the BBQ or whatever cooking unit you like, with the right techniques, you too can create Epic pork belly and crackle 💕 🐖 🔥

Windy, windy, windy

Had the July Masterclass today, and apart from the howling wind, was a cracking day!

Weather sometimes throws a few curve balls when cooking live, but managed to pull it altogether for a smooth class

Fiesta and Siesta, with a little rice flour for the coating

Double fried, low heat, then high heat

Finished with a good helping of my Boomanero BBQ sauce

First was a snapped 31 spline axle

New housing and billet axles, better brakes, and a new tune, was all going good until it wasn't

The 15 year Detroit Locker centre finally gave way 😭

Hence the lack of noise lately 😉

Last night I played my first game of Basketball in like 10 years.......

Pulled up this morning feeling so fresh and energized.

That's a total lie, feels like I've been hit by a bus, can't bend, move, twist. 3 jarred fingers, hips bruised, took a heap of skin off my knee, elbows sore

But holy crap was it fun

Just gotta remember I ain't a kid anymore, yet I'm still diving and rebounding like I'm Rodman

16 points, and we beat the top team

Boomanero

Sweet, tangy, fiery, the perfect combination 🔥 💕

I use this stuff on everything

Tonight was fried Fiesta and Siesta Wings with a good drizzle of Boomanero to finish

Still licking my lips!!

So what do you get in my BBQ Box?

Smoked Brisket, seasoned with my Grazed and Blazed, barbecued in Suzie over charcoal and ironbark for 8-12 hours.

Generally I cook Sher Wagyu Brisket, but sometimes it's Black Market or Black Onyx

Barky, moist and delicious!

For the Pulled Pork, most of the time it's Scottsdale Pork Butts, rubbed in my Swine and Dine, then smoked until barky, moist and tender. These usually take 8-10 hours.

Chicken Wings are seasoned with my Clucked and Plucked, then smoked till a little crispy, and oh so juicy, roughly an hour or so

Throw these 3 proteins in a box with a couple of fresh sides, BBQ sauce and a roll, and that's it

Nice and simple 😉

I know it's dark and cold these evenings......but who would be keen for a Friday night BBQ Box in Tooradin?

I've got more lighting sorted so it won't be too dark and scary out the back of the shop, and it's all takeaway anyway, so jump in the car and enjoy the BBQ or take it home (the foreshore would probably be quiet haha)
