So today was going to be just a simple job for 30 Sprinkler Fitters (quite a few I've worked with over the years), with Burgers, Brisket, Lamb and Chicken on the menu

And I was trialling a young fella for his 1st job

Anywho, on a couple days notice we picked up a job for 120, only 20 minutes from the 1st job.....

Of course I can do that

So service at 12pm and 1pm, nothing like being thrown in the deep end

Well the young fella absolutely smashed it, both jobs smooth AF (especially the BIG job) 120 boxes out and served in 30 minutes, pulling the pork and slicing the brisket fresh (4 boxes a minute, not bad)

Now Booma's BBQ wouldn't be what we are without the help 💕😘

Of course Courtney, behind the scenes, prepping and the odd job, and then the girls who do every other job with me

We are a good TEAM! And it's much appreciated 👍

It's also great to see the youth, with a work ethic and getting it done ✅

Rosey was running fantasticly.......

Then a random pop/backfire at high rpm

So the last 2 days I cleaned the fuel filter, removed and cleaned the fuel tank, cleaned the fuel regulator, new spark plugs, new leads, rebuilt the Holley Carb

Also checked compression, 180 on all 8 cylinders

And you know what, runs sweet for a km then starts to pop and backfire at high rpm (4000 and above)

So I don't know

Trying colder plugs tomorrow, will look further into the distributor (as this has had dramas before)

Played around with an idea, that Aaliyah (A+ Brisket Roll slinger) mentioned to me for about 3 months.....

Jalapeno Mac n Cheese Kransky

Now this has fresh and pickled Jalapenos mixed through the pork

Macaroni elbows
Cheddar cheese
American cheese
Cheese sauce

Pics may not show the cheesiness but it's quite balanced without being too cheesey 😆

Wagyu Steak Sandwich

Dry brined the scotch steak for an hour or 2

Reverse seared (no BBQ or grill, just 120c in the oven till just under medium) then a cast iron pan with tallow for the sear

Toasted Turkish bread, caramelized onion, rocket, spinach, prosciutto, steak, tomato, Swiss cheese, balsamic glaze and pesto

A real tasty combo!

Another Brisket Roll pop-up in the books

14 BIG briskets were sliced and handed out today, and we sold out just at 2pm

Roughly 375 rolls, half a dozen meat boxes and a mix of other +/- took up the rest

Thanks to all the regulars, newcomers and of course Kellys Meats not just for the meat but also the space to do what we do 🌞😊😌🔥👍
