I’ll be honest… I used to run away from anchovies. But this pasta? It converted me in one bite.
The anchovies melt straight into the butter (I promise, they disappear!), creating the silkiest sauce that clings to every strand of spaghetti. Bucatini all’Amatriciana, a Roman classic with a story behind it! This dish comes straight from the town of Amatrice, and it’s one of the recipes that truly shows how powerful simple ingredients can be. Guanciale, tomato, pecorino… that’s all you need when the ingredients are good and the technique is right. And bucatini is the perfect pasta for this sauce, it holds the flavour inside and out.

In my kitchen, I follow the traditional method but add one small ingredient that gives it an extra lift. Nothing crazy, just a little touch that I think makes the flavours even better. I’m curious if you’ll agree.
