Ingredients
For Marinating the Chicken:
500g chicken (bone-in pieces)
1 cup yogurt
1 tbsp ginger-garlic paste
1 tsp red chili powder
1/2 tsp turmeric powder
1 tsp garam masala
1 tsp cumin powder
1 tsp coriander powder
1 tbsp lemon juice
Salt to taste
For the Rice:
2 cups basmati rice (soaked for 30 minutes)
4 cups water
1 bay leaf
2 green cardamoms
2 cloves
1-inch cinnamon stick
1 tsp salt
For Cooking Biryani:
2 tbsp ghee or oil
1 large onion (thinly sliced)
1 large tomato (chopped)
1/2 cup chopped coriander leaves
1/2 cup chopped mint leaves
1 tsp biryani masala
1/2 tsp saffron strands (soaked in 2 tbsp warm milk)
1/4 cup fried onions (for garnish)
Instructions
Step 1: Marinate the Chicken
In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, cumin, coriander, lemon juice, and salt.
Add the chicken pieces and coat well. Cover and marinate for at least 1 hour (overnight for best results).
Step 2: Cook the Rice
In a pot, boil water and add bay leaf, cardamoms, cloves, cinnamon, and salt.
Add the soaked basmati rice and cook until 70% done. Drain the water and set the rice aside.
Step 3: Cook the Chicken
Heat ghee/oil in a large pan and sauté onions until golden brown.
Add chopped tomatoes and cook until soft.
Add marinated chicken and cook on medium heat until tender.
Stir in chopped coriander, mint, and biryani masala.
Step 4: Layer the Biryani
In a heavy-bottomed pot, add a layer of cooked chicken.
Top with a layer of rice, followed by saffron milk and fried onions.
Repeat layers and seal the pot with a tight lid or dough.
Step 5: Dum Cooking (Slow Cooking)
Place the biryani pot on low heat for 20-25 minutes.
Let it rest for 10 minutes before opening.
