For the Shrimp 🦐

300 g (10 oz) raw shrimp, peeled & deveined

1 tbsp butter 🧈

2 cloves garlic, minced πŸ§„

2–3 tbsp chipotle in adobo sauce, finely chopped 🌢️

1/2 cup heavy cream πŸ₯›

1/4 cup grated Parmesan cheese πŸ§€

1 tsp lime juice πŸ‹

Salt & pepper, to taste πŸ§‚

For the Pasta 🍝

200 g (7 oz) pasta (fettuccine, linguine, or spaghetti) 🍝

Fresh parsley, chopped for garnish 🌿

πŸ‘©β€πŸ³ Instructions
1. Cook the Pasta 🍝

Bring a large pot of salted water to a boil.

Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/4 cup pasta water.

2. Cook the Shrimp 🦐

In a large skillet, heat olive oil over medium-high heat.

Season shrimp with smoked paprika, salt, and pepper.

Cook shrimp 2–3 minutes per side until pink and opaque. Remove and set aside.

3. Make the Creamy Chipotle Sauce 🍢

In the same skillet, melt butter over medium heat.

SautΓ© garlic and shallot for 1–2 minutes until fragrant.

Stir in chopped chipotle in adobo and cook 30 seconds.

Add heavy cream, Parmesan, and lime juice, stirring until smooth.

Season with salt and pepper to taste.

If the sauce is too thick, add reserved pasta water 1 tbsp at a time to reach desired consistency.

4. Combine Pasta & Shrimp πŸ₯’

Toss cooked pasta in the sauce until fully coated.

Gently fold in shrimp.

β—¦ 2 lobster tails (4–6 oz each), shells split and meat loosened
β—¦ 2 tablespoons unsalted butter
β—¦ 1/2 teaspoon smoked paprika
β—¦ Salt and freshly ground black pepper, to taste
β—¦ 1 tablespoon olive oil
β€’ For the Garlic Cream Sauce:
β—¦ 2 tablespoons unsalted butter
β—¦ 3 garlic cloves, minced
β—¦ 1/2 cup heavy cream
β—¦ 1/4 cup low-sodium chicken broth (or seafood stock)
β—¦ 1 teaspoon Dijon mustard

Directions:
1. Prepare the Lobster Tails:
Using kitchen shears, cut through the top of the lobster shells lengthwise and pull the meat up and over the shell, keeping it attached at the base. Season the lobster meat with paprika, salt, and pepper.
2. Sear the Lobster Tails:
In a skillet over medium-high heat, heat the olive oil and 2 tablespoons of butter. Once hot and foamy, add the lobster tails, flesh-side down. Sear for 2–3 minutes until golden brown. Flip and cook another 3–4 minutes, basting with butter until the meat is opaque and cooked through. Remove from pan and set aside.
3. Make the Garlic Cream Sauce:
In the same skillet, lower heat to medium and add 2 tablespoons of butter. Add minced garlic and sautΓ© for 30 seconds until fragrant. Pour in the chicken broth and simmer for 1 minute. Return the lobster tails to the pan and spoon sauce over them. Simmer gently for 1 minute to warm through.

𝐈𝐧𝐠𝐫𝐞𝐝𝐒𝐞𝐧𝐭𝐬:

For the Chicken & Mash:

1 boneless skinless chicken breast

Salt, pepper, and olive oil to season

2 medium potatoes, peeled & cubed

1 tbsp butter

2–3 tbsp milk (or plant-based alternative)

Salt to taste

For the Salad:

Β½ cucumber, sliced

5–6 cherry tomatoes or 1 medium tomato, chopped

Β½ red bell pepper, chopped

Β½ yellow bell pepper, chopped

Β½ cup arugula

1 tsp olive oil

Β½ tsp lemon juice or balsamic vinegar

Salt & pepper to taste

1️⃣ Boil & Mash Potatoes
Boil potatoes until fork-tender (12–15 mins). Drain, mash with butter and milk until smooth. Season with salt.

2️⃣ Cook the Chicken
Season chicken breast with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken 5–6 minutes per side or until golden and cooked through.

3️⃣ Toss the Salad
In a bowl, combine all salad ingredients. Drizzle with olive oil and lemon juice or vinegar. Toss gently.

4️⃣ Assemble the Plate
Serve the sliced chicken with a scoop of mashed potatoes and a heap of fresh salad on the side.

Preheat the oven to 200Β°C (400Β°F). In a small bowl, mix olive oil, mustard, lemon juice, garlic powder, parsley, paprika, salt, and pepper, then coat the chicken breasts with the mixture. Place them on a baking sheet. Toss the halved baby potatoes with olive oil, thyme, garlic powder, salt, and pepper and arrange them around the chicken. Bake everything for 30–35 minutes until the chicken is golden and cooked through and the potatoes are crispy. Meanwhile, steam the green beans for about 5 minutes, then toss them in butter, salt, and pepper. Serve the herb-crusted chicken with the roasted potatoes and buttery green beans.
