*Ingredients:*

- 2 slices whole grain bread
- 1 ripe avocado, mashed
- 2 eggs

1. Toast bread until golden brown.
2. Poach eggs by cracking into simmering water (3-4 minutes).
3. Spread mashed avocado on toast.

*Tropical Fruit Cake*

*Ingredients:*

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup whole milk
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup mixed tropical fruits (mango, pineapple, papaya)
- 1 tablespoon vanilla extract

*Instructions:*

1. Preheat oven to 350°F (180°C). Grease a 9-inch round cake pan.
2. Whisk flour, sugar, baking powder, and salt.
3. Whisk eggs, milk, and softened butter.
4. Add vanilla extract and mixed fruits to the wet ingredients.
5. Combine wet and dry ingredients. Mix until just combined.
6. Pour batter into prepared pan.
7. Bake for 35-40 minutes or until a toothpick comes out clean.

Ingredients

🥭 1 ripe mango (cubed)

🍓 Fresh strawberries (whole + halved)

🍍 Pineapple chunks

🟧 Persimmon slices

Instructions

Cut the mango into cubes while still on the skin and open it like a flower.

Slice strawberries in halves.

Cut pineapple into bite-size chunks.

Slice persimmon into thin rounds.

Arrange everything neatly on a plate and serve fresh.
