Barbeque chicken in a village often involves simple techniques and local ingredients, resulting in a smoky, flavorful dish. This can range from whole chickens roasted over a fire, to chicken wings grilled on skewers, sometimes using unique methods like a blacksmith's air booth. Many village cooks utilize homemade spice blends, yogurt, and lemon juice for marinating, and rely on charcoal or wood fires for cooking.
Here's a more detailed look:
Preparation:
Marinating:
Chicken is often marinated in a mixture of spices, yogurt, ginger, garlic, chili powder, cumin, coriander, garam masala, black pepper, salt, lemon juice, and BBQ sauce. Sometimes mustard oil is also used.
Spices:
The spice blend is crucial for flavor and can vary greatly depending on the region and family recipe.
Grilling/Roasting:
Chicken is typically cooked over a charcoal or wood fire, either directly on the grill or on skewers.
Unique Techniques:
Some villages use unconventional methods, like a blacksmith's air booth to provide airflow while grilling.
Sides:
Village-style BBQ often includes sides like rice, Muri Ghonto (a fish and rice dish), or other local specialties.
Community & Special Occasions:
Sharing: Barbeque chicken in many villages is a communal affair, with food often shared with neighbors or those in need.
Festivals: Barbecue chicken is a common dish for festivals and celebrations.
Homemade and Heartfelt: The focus is often on using fresh, local ingredients and preparing the meal with care and love.

There is a very high demand of the street foods in Dhaka city of Bangladesh. The reasons can be attributed by the tastes and varieties of foods, easily accessibility, low price, readily made, attraction to the foods, and above all, needs of the street people. Dhaka is the most populous city of Bangladesh. Street food entrepreneurs are still unable to fulfill the demands of this huge population of this city. Multivariate analysis techniques were used to identify the factors having influence on the habits of street food eaters in Dhaka city. The confirmatory factor analysis identified six factors such as, pleasure and soundness, convenience and variety, cost, attractiveness, food value, & taste and image. Results also show that the street food eating habit of the people of Dhaka City is significantly influenced by the pleasure and soundness, convenience and variety, cost, and attractiveness to the foods. This study suggests that the tastes and variety of street foods, accessibility, price and attractiveness should be emphasized to increase the attraction of the street food eaters towards the street foods in Dhaka City of Bangladesh.
