Healthy Potato Empanadas with Ground Beef and Carrots 🥕🍖🥧
Ingredients:
For the dough:
2 cups cooked and mashed potatoes (peeled)
2 tablespoons olive oil
1 egg
2 tablespoons oat flour (or rice flour)
Salt to taste
Pinch of nutmeg (optional)
For the filling:
200g lean ground beef
1 grated carrot
1/2 chopped onion
1 minced garlic clove
1 tablespoon olive oil
Salt, black pepper, and parsley to taste
Instructions:
Filling:
In a pan, heat the olive oil and sauté the garlic and onion.
Add the ground beef and cook until golden brown.
Add the grated carrot and sauté for another 3-4 minutes.
Season with salt, pepper, and parsley. Set aside and let cool.
Dough:
Mix the mashed potato with the olive oil, egg, salt, nutmeg, and flour until a dough forms. Add a little more flour if necessary.
Assembly:
Line the tartlet molds with the dough, covering the bottom and sides.
Fill with the braised meat and cover with a little more dough on top (or leave it open, like a boat).
Brush with egg yolk (optional) to brown.
Bake:
Bake in a preheated oven at 200°C for about 25 to 30 minutes, or until lightly golden.

Creamy Corn Cake 🤤⤵️
Ingredients:
1 can of drained sweetcorn
1 can of condensed milk
1 can of milk (use the same measurement as the can of condensed milk)
3 eggs
3 tablespoons of cornmeal
1 tablespoon of wheat flour
1 tablespoon of baking powder
1 pinch of salt
Instructions:
In a blender, combine the corn, condensed milk, milk, eggs, cornmeal, wheat flour, and salt.
Blend until smooth.
Finally, add the baking powder and pulse just to combine.
Pour the batter into a greased and floured (or cornmeal-dusted) pan.
Bake in a preheated oven at 350°F (180°C) for about 40 to 50 minutes, or until lightly golden brown and the center is firm (it will be naturally creamy).
Let it cool before cutting to maintain the ideal creamy texture.

🍓 Ingredients:
1 can of sweetened condensed milk
1 carton of heavy cream (200g)
1 pot of plain yogurt (170g or 200g)
1 tablespoon of lemon juice (optional, enhances the flavor)
1 apple, diced
1 banana, diced
1 small papaya, diced
1 ripe mango, diced
1 small bunch of seedless grapes (cut in half)
1 kiwi, sliced
10 strawberries, diced
1/2 can of chopped pineapple in syrup (or fresh pineapple cooked lightly with sugar)
Additional fruit to taste: peach, plum, melon, etc.
🥣 Directions:
1. Clean all fresh fruit. Peel the ones you need and cut into medium cubes.

Ingredients:
- 1 can of condensed milk (395g)

1 cup sugar
1 box strawberry (or raspberry) gelatin
1/2 cup oil
1 cup milk
2 cups all-purpose flour
1 tablespoon baking powder
🧁 Directions:
Preheat the oven to 350°F (180°C) and grease a medium-sized pan with margarine and flour.
In a blender, beat the eggs, sugar, oil, milk, and gelatin until smooth.
Transfer to a bowl and gradually add the flour, mixing well.
Add the baking powder and stir gently.
Pour the batter into the pan and bake for about 35–40 minutes, or until golden brown and a toothpick inserted into the center comes out clean. 🍓 Frosting (optional):
