🍎🍐 Apple & Pear Crumble Muffins
Autumn is officially here, and the oven has been switched on! These apple and pear crumble muffins are the perfect way to welcome the season. They definitely go down a treat with a cup of tea or coffee.
Ingredients:
Muffins:
* 2 cups flour
* 1 tsp baking powder
* ½ tsp baking soda
* ¼ tsp salt
* ½ cup brown sugar
* Zest of 1 orange
* 2 eggs
* ½ cup vegetable oil
* ½ cup Greek yogurt
* ½ cup milk
* 1 tsp vanilla extract
* ½ tsp almond essence
* 1½ cups diced apple and pear — about 1 apple + 1 pear
Crumble topping:
* 1 cup flour
* ½ cup brown sugar
* ¼ tsp salt
* 85 g unsalted butter, melted
* Almond slivers, for topping
Method:
1. Preheat the oven to 170°C. Line a 12-hole muffin tin with paper cases.
2. Make the crumble topping: In a bowl, combine the flour, brown sugar and salt. Pour in the melted butter and mix until coarse crumbs form. Set aside.
3. Prepare the fruit: Dice the apple and pear into small pieces.
4. Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda and salt.
5. Mix the wet ingredients: In a separate bowl, whisk together the brown sugar, eggs, vegetable oil, Greek yogurt, milk, vanilla, almond essence and orange zest.
6. Combine: Add the wet ingredients to the dry ingredients and gently fold until just combined. Do not overmix.
7. Add the fruit: Gently fold the diced apple and pear through the batter.
8. Fill the muffin cases: Divide the batter evenly between the 12 cases.
9. Top: Generously sprinkle each muffin with the crumble mixture, then finish with a scattering of almond slivers.
10. Bake at 170°C for 25 minutes, or until golden and a skewer inserted into the centre comes out clean.
11. Allow the muffins to cool in the tin for 5–10 minutes before transferring them to a wire rack.
