✅ DELICIOUS SINIGANG SA MISO ✅
(Sour Miso Soup with Fish)
✅ INGREDIENTS
1 kg fish salmon belly (maya-maya, or tilapia), cleaned and sliced
2 tbsp cooking oil
5 cloves garlic, minced
1 medium onion, chopped
2 medium tomatoes, chopped
¼ cup yellow miso paste
1 liter water
1 pack (or 2 tbsp) sinigang mix or 1 cup tamarind extract
2 pieces green chilies (siling haba)
1 cup mustard leaves or kangkong (water spinach)
10 pieces okra (optional)
1 small radish, sliced into rounds
1 medium eggplant, sliced
Salt and pepper to taste
✅ PROCEDURE Sauté the Aromatics
Heat oil in a pot over medium heat.
Sauté garlic, onion, and tomatoes until soft and fragrant.
Add Miso Paste
Stir in the miso paste and cook for 2–3 minutes, allowing it to blend with the aromatics.
Add Water and Sour Agent
Pour in the water and bring to a boil.
Add sinigang mix or tamarind extract. Stir well.
Cook the Vegetables
Add radish and okra first, as they take longer to cook. Simmer for about 5 minutes.
Add eggplant and green chilies. Simmer for another 3 minutes. Add the Fish
Gently place the fish in the pot and cook for about 5–7 minutes or until cooked through.
Final Touches
Add mustard leaves or kangkong. Let them wilt for about 1 minute.
Season with salt and pepper to taste. Serve
Turn off the heat and serve hot with steamed rice. Enjoy!
