Mga sangkap na kailangan (ingredients)

250 grams munggo (red) 6 hours nakababad sa tubig para lumambot

1 kilo malagkit na bigas (glutinous rice)
600 grams or 750 grams light brown sugar(segunda)
3 cups Kakang gata (pure coconut milk or unang piga)
1/2 tspn salt or asin

Topping (latik)

1 and 1/2 cup kakang gata (coconut milk or coconut cream)

Bilao or tray
And dahon ng saging (banana leaves)

CHICKEN MACARONI SALAD RECIPE from Lola Vlogger Aling Belen para sa Darating na pasko at bagong taon.. kaya ano pang hinihintay mo gora nah!!!!!

INGREDIENTS ✅

300 to 500 gram chicken breast (boiled and shred)
500 grams macaroni elbow
3-4 cellery stalks
1 cup white onion minced
1 cup carrots minced
3-4 slices sweet ham cut into cubes
200 grams cheese
pineapple tidbits drained (1 tin)
1/4 cup pickle relish (optional)
1/4 cup raisins
mayonaise 3-4 cups add more if needed
250ml all purpose cream

PROCEDURE ✅✅

✅ Una ilalaga muna naten ang pitso (chicken breast) at hihiwain na natin ang mga gagamiting nating ingredients (hiwain natin ng pinong pino) ang ham at cheese naman ay hihiwain natin ng small cubes . pag luto na ang manok natin at malamig na himayhimayin na natin then set aside

✅papakuluaan na natin ang macaroni natin (haluhaluin lang naten para di mag dikit dikit) pag luto na ay hanguin na natin at hugasan para di ma over cook then set aside

✅ sa isang bowl ay ilagay na natin ang macaroni at lahat ng ingredients

📍 SWEET & SOUR RECIPE📍
✅LAPULAPU
✅ PAMPANO

📍 INGREDIENTS
• 1 whole Lapu-Lapu (Grouper) Or Pampano about 1-1.5 kg
• Salt and pepper, to taste ( base on you taste)
• Cornstarch, for coating the fish
• Vegetable oil - for frying
• 1 onion, sliced
• 1 bell pepper (red or green), sliced
• 1 carrot, sliced
• 1 cup pineapple chunks (canned or fresh)
• 1/4 cup vinegar
• 1/4 cup ketchup (banana or tomato)
• 2 tablespoons soy sauce
• 2 tablespoons brown sugar
• 1 tablespoon cornstarch, dissolved in 2 tablespoons water
• Green onions, chopped, for garnish (optional)

📍 PROCEDURE
1. Clean and scale the Lapu-Lapu or pampano fish. Cut it into serving-sized pieces. Pat the fish dry with paper towels and season with salt and pepper.

2. Coat the fish with cornstarch, shaking off any excess.

3. Heat vegetable oil in a deep pan or skillet for frying. Fry the fish until golden brown and cooked through. Remove the fish from the pan and set it aside on paper towels to drain excess oil.

4. In a separate pan, heat a tablespoon of vegetable oil over medium heat. Sauté the onion, bell pepper, and carrot until they start to soften.

5. Add the pineapple chunks to the pan and cook for another minute.

6. In a bowl, mix together vinegar, ketchup, soy sauce, and brown sugar until well combined. Pour the sauce mixture into the pan with the vegetables and pineapple. Bring the sauce to a simmer.

7. In a small bowl, dissolve the cornstarch in water to make a slurry. Gradually add the slurry to the sauce while stirring continuously. Cook until the sauce thickens to your desired consistency.

8. Return the fried Lapu-Lapu or pampano fish to the pan with the sauce, coating each piece evenly. Allow it to simmer for a few more minutes to heat the fish through.

9. Transfer the Lapu-Lapu or pampano sweet and sour fish to a serving dish. Garnish with chopped green onions if desired.

10. Serve hot with steamed rice.

📍CAJUN MIXED SEAFOOD RECIPE📍

📍 INGREDIENTS
For the seafood:
500g shrimp (peeled and deveined)
300g mussels (cleaned)
300g clams (optional)
2 corn on the cob (cut into thirds)
250g crab legs or crab claws (optional)
1 lemon (cut into wedges)

For the Cajun butter sauce:
1 cup (225g) unsalted butter
1 tbsp olive oil
6 cloves garlic (minced)
1 small onion (finely chopped)
1 tbsp Cajun seasoning (adjust to taste)
1 tsp paprika
1 tsp chili flakes (optional for extra heat)
1 tsp Old Bay seasoning (optional but flavorful)
1 tbsp brown sugar
Juice of 1 lemon
Salt and pepper to taste
Fresh parsley (chopped, for garnish)

📍 PROCEDURE
1. Prepare seafood:
Boil or steam potatoes and corn until cooked. Set aside.
In a large pot, bring water to a boil with a little salt. Add mussels, clams (if using), and crab. Cook until shells open (about 5-7 minutes). Remove and drain.
Cook shrimp last, as they take only 2-3 minutes. Set all seafood aside.
2. Make Cajun butter sauce:
In a large skillet or pot, melt butter with olive oil over medium heat.
Sauté garlic and onion until fragrant and soft (2–3 minutes).
Add Cajun seasoning, paprika, chili flakes, Old Bay, and brown sugar. Stir to combine.
Pour in lemon juice, and season with salt and pepper to taste.
Let the sauce simmer for 3–5 minutes to deepen the flavor.
3. Combine and coat:
Add cooked seafood, and corn to the skillet. Toss gently to coat everything in the Cajun sauce.
Simmer for another 2–3 minutes until heated through.
4. Serve:
Serve hot, garnished with fresh parsley and lemon wedges.
Best enjoyed with crusty bread or steamed rice to soak up the sauce.

1 tbspn salt
1 tspn ground black pepper
4 tbspn cornstarch

2 tbspn annato or (atsuete or magic atsuete) mix with oil or water 4 tbspn of water

INGREDIENTS ✅

2 cups glutinous flour ( malagkit )
1 cup young coconut strips
3/4 cup coconut milk
1/2 cup brown sugar
wilted banana leaves for wrapping, about 3 inch

PROCEDURE

✅In a mixing bowl, combine rice flour, coconut strips, coconut milk, and brown sugar. Mix well until dough like.

✅In a banana leaf, put a tablespoon of mixture then spread evenly and wrap.

✅ Grill over hot charcoal for 15-20 minutes or until done. Turn frequently.

150grams fish balls

PROCEDURE✅✅

1.Balatan ang papaya at pag tapos ay kayurin ito ng pang kayod ng buko. at pag tapos itong makayod lahat ay hugasan ng maigi ang papaya para maalis ang pait nito. set a side muna

Pucherong Manok Recipe

Ingredients:
1 kilo chicken cut into serving sizes
1 cup tomato sauce
½ small cabbage, quartered
1 small bunch pechay (peck Chye or bok choy)
100 grams green beans (french beans), cut into 1 ½ inch length
4 pcs bananas (saba variety or plantains), cut into half
2 pcs medium sweet potatoes or potatoes, quartered
1 medium onion, sliced
½ head crushed garlic
1 pc chorizo de bilbao (Chinese sausage), sliced (optional)
1 small can garbanzos( chick peas) (optional)
2 cups water (add more if necessary)
4 Tbsp. catsup
2 tsp. sugar

LECHONG MANOK RECIPE✅

INGREDIENTS ✅

1 2 to 3 lbs. whole chicken
Marinade
4 thumbs ginger crushed
5 cloves garlic crushed
1 medium red onion sliced
5 pieces dried bay leaves crumbled
1 stalk lemongrass bottom part crushed
1 teaspoon coarse sea salt
¼ teaspoon ground black pepper
1 ¾ cups 7-up

PROCEDURE ✅

1 stalk crushed lemongrass tanglad
2 bunches of green onions dahon ng sibuyas
Instructions
In a large bowl, combine all the marinade ingredients. Mix well.
Place the chicken inside a large re-sealable bag. Pour the marinade in the bag with the chicken. Put the onion and lemongrass inside the cavity. Seal and refrigerate overnight.
Remove the chicken from the bag and then stuff with fresh lemongrass and green onion.
Prepare to roast the chicken on the grill by skewering the entire fowl on a spit and secure both sides with a grill fork.
Spit-roast (or i-litson in Tagalog) for 2 ½ to 3 hours or until the chicken is done
Transfer to a serving plate. Serve with lechon manok sauce and atchara.

✅Ingredients:
2 pcs pork heart
500g pork lungs
300g pork fat, skin on
8 cloves garlic, minced
1 large red onion, minced
20ml oil
4 pcs bay leaves
2 pcs red hot pepper, finely diced
2 large red capsicums, finely diced
4 large red tomatoes
2 cup rice vinegar
1cup stock, from boiled meat
1 tbsp cayenne pepper
1 tbps annatto powder, dissolved in
3 tbsp stock fish sauce
1 pc medium size white radish
1 cup pineapple juice
salt
freshly ground black pepper

✅Bopis Cooking Instruction:
In a pot, add pork fat, heart and lungs, pour 1 cup of vinegar, 1 tbsp salt and enough water to cover the meat. Bring to a boil and cook for 20 minutes.
Remove meat and cool it down, reserve the stock. Once cooled down, dice the meat finely then set aside.
In a heavy pan, heat oil and saute garlic, onions and tomatoes.
Add the chopped meat, cayenne pepper and bay leaves, stir fry for 3 minutes.
Add capsicums, 1 cup of vinegar and stock, pineapple juice, and red hot pepper bring to a boil and simmer in high heat until sauce thickens.
Add annatto powder mixture then season with fish sauce and lots of freshly ground black pepper.

✅Ingredients:
• 1 large milkfish
• 1 large eggplant, cut into 1-inch
• 1 onion, peeled and sliced thinly
• 4 garlic, peeled and pounded
• 1 thumb-size ginger, sliced
• ½ cup vinegar
• 1 cup water
• 3 finger chili peppers
• 1 ½ teaspoons salt
• 1 teaspoon peppercorns
• 1 teaspoon oil
* 1 ampalaya cut

✅Procedure:
1. Clean and gut the fish, leaving scales intact.
Cut into serving parts.
2. In a wide pot combine fish, eggplant, onion, garlic, ginger, vinegar, water, finger chili peppers, salt, and peppercorns.
3. Cover and let simmer for about 10 to 15 minutes or until fish is cooked and liquid is reduced.
4. Drizzle oil on top and stir gently to combine. Serve and enjoy 😉

✅BEEF BROCCOLI WITH OYSTER SAUCE ✅

✅FOR THE BEEF & MARINADE
1 lb (450g) flank steak or sirloin, thinly sliced against the grain
1 tbsp soy sauce
1 tbsp cornstarch
1 tsp sesame oil (optional)

✅FOR THE SAUCE
1/4 cup soy sauce
1/4 cup oyster sauce
2 tbsp brown sugar
2 tbsp water or beef broth
1 tbsp cornstarch
1 tsp grated ginger
2 garlic cloves, minced
1 tsp pepper flakes

✅OTHERS
2 cups broccoli florets
2 tbsp oil (for stir-frying)
Cooked rice (for serving)

✅ PROCEDURE
Toss sliced beef with soy sauce, cornstarch, and sesame oil. Let sit for 15–30 minutes while prepping everything else.

In a bowl, mix soy sauce, oyster sauce, brown sugar, water, cornstarch, ginger, and garlic. Set aside.

Boil or steam broccoli for 1 minute until bright green and slightly tender. Drain and set aside.

Heat oil in a pan or wok over high heat. Sear the beef in batches (don’t overcrowd) until just browned—about 1–2 mins per side. Remove and set aside.

In the same pan, add a little more oil if needed, then return beef and broccoli. Pour in the sauce. Stir-fry everything together for 1–2 minutes until sauce thickens and coats everything nicely.
Serve with steamed rice. Enjoy!
