(Headline): I got the last laugh

I used to be a little on the “plus side”...
Actually, who am I kidding? I was 5’ 7” and 215...and no matter what I told myself back then, I did not “wear it well.”

But now that I’m down to 167 and counting, I can’t WAIT to share my story! See, back then I had this one coworker who was a TOTAL JERK
He was a gym rat who was in great shape. If he wasn’t so mean, I probably would’ve had a crush on him...
Anyway, he would always see me walk in with my big creamy frap and say...
“THAT is basically a milkshake for adults. No wonder you barely fit through the door!”
At the time, I would always snap back with some sort of comeback. I didn’t want to look like I couldn’t take it. The whole office was full of guys like him so I wanted to prove I was “one of the guys”.
But deep down, it HURT!
On the one hand, I felt insulted. Like he was talking down to me because of my favorite coffee choice.
On the other, I secretly wondered if he was right. So one night I did some searching online.....and I discovered this mind blowing video that proved that my favorite coffee was NOT the problem.
In fact, by watching that video, I discovered a simple 30 second “coffee trick” I could use to transform it into the ultimate metabolism boost!
So I started using that “coffee trick” myself.....and within a few weeks, Mr. Jerkface had a VERY different reaction.

All the sudden, he was standing there drooling with nothing to say.....because I was in a WAY smaller and more flattering dress AND I was still drinking the same coffee as always.

At one point, he even walked up to me after work and asked what I was doing differently...and then he actually tried to ask me out!
TBH...it’s not out of the question.
But for now I’ve told him “maybe” and I’m enjoying watching him squirm

Cookie Cups with Chocolate Mousse
INGREDIENTS
• 150 grams of BUTTER WITHOUT SALT at room temperature
• 2/3 cup BROWN SUGAR
• 1/3 cup of CRYSTAL SUGAR
• 1 EGG
• 2 GEMS
• 1 tablespoon of VANILLA EXTRACT*
• 1/2 teaspoon of SALT
• 2 + 3/4 cup WHEAT FLOUR
• 2/3 cup CHOCOLATE DROPS
PREPARATION METHOD: COOKIE CUP
1. Mix the butter with the sugars until obtaining a homogeneous cream. Then add the egg and yolks and mix well.
2. Add the vanilla extract and salt and mix.
3. Add the flour and knead with your hands until obtaining a homogeneous mass.
4. TIP: Only knead until the flour is incorporated into the ingredients - if you knead too much from there, the dough will be soft and not crunchy.
5. Add the chocolate chips and then mold the dough into cups, cutting the edges with a knife. Then take it to the freezer for at least 2 hours so that the dough is completely frozen.
6. Preheat the oven to 220˚C and place a rectangular sheet of parchment paper inside the cookie cup. Then, crush a ball of aluminum foil and place it inside, to prevent the edges of the cookie from losing their shape.
7. Bake the cookie cups for 15 minutes and, as soon as they come out of the oven, unmold them and remove the foil and butter from inside. Allow to cool completely before using.
PREPARATION METHOD: COOKIE CUP WITH CHOCOLATE AND MILK
1. Melt the chocolate and pour it over the cup.
2. Turn the cup upside down and tap lightly to remove excess.
3. Take it to the freezer for the chocolate to harden.
4. Then pour milk over the cups and enjoy!
5. TIP: You can also use the cookie cup as a support to serve a delicious Nutella mousse*.

Macadamia Cookies and Strawberry Drops
INGREDIENTS
• 1/2 cup (tea) of softened BUTTER
• 1 tablespoon of VANILLA ESSENCE
• 1 large EGG
• 1/2 cup (tea) of CRYSTAL SUGAR
• 1/2 cup (tea) of BROWN SUGAR
• 1 and 1/2 cup of WHEAT FLOUR
• 1 pinch of SALT
• 1/2 teaspoon of CHEMICAL YEAST POWDER
• 1/2 teaspoon of SODIUM BICARBONATE
• 3/4 cup (tea) of chopped MACADAMIA
• 100 grams of Callebaut STRAWBERRY DROPS (or whatever you prefer)
METHOD OF PREPARATION
1. In a bowl, add the egg, vanilla, sugars and butter. Beat until it becomes a fluffy cream, it can be with an egg be**er or mixer.
2. Add all the sifted dry ingredients and mix, then add the macadamia nuts. Cover with plastic and let the dough rest in the fridge for 20 minutes.
3. Make balls using a dessert spoon as a measure. Place the balls on a greased and floured baking sheet or one lined with parchment paper, well away from each other, at least 7 cm, as they flatten and rise when baking.
4. After they are on the baking sheet, decorate with the strawberry drops, I managed to put 4 drops in each ball. Bake in a preheated oven at 180/200°C for 15 to 20 minutes, or until the edges are golden.
5. Wait for it to cool down a little and remove from the roast

Ingredients to make Tuna and Cheese Pâté Salad:
• 1 bunch of parsley
• 1 can of Tuna
• 1 can of green corn
• 1 Carrot
• 1 Scallion
• 1 small pepper
• 6 tablespoons of Mayonnaise
• 4 pinches of black pepper
• 300 grams of white cheese
• 250 grams of Macaroni

How to make Tuna and Cheese Pâté Salad: 1
To start this tuna and cheese pate salad, start by putting the pasta to cook in a pan with water, seasoned with salt. When the pasta is cooked, remove from the heat and drain the water. Wash the vegetables and cut into small cubes. Open the cans of tuna and corn, chop the cheese into cubes and set aside. In a bowl, mix the tuna, black pepper and mayonnaise. If you wish, you can add more mayonnaise. Place all the ingredients in a bowl and mix carefully so as not to break the dough. Your tuna pate with cheese salad is ready! Recipe for Fruit Salad with Sago
Ingredients to make Sago Fruit Salad:
• 1 cup of sago (tapioca pearls)
• 1 can of condensed milk
• 1 glass of coconut milk (200 ml)
• fruits to taste
How to make Fruit Salad with Sago:
Start by rinsing the sago well with running water, until the water comes out clean. This is important to eliminate the starch from the sago and make it firmer. Bring a pan with approximately 1.5 liters of water to the boil and wait for it to boil. When the water boils, lower the heat, add the sago and let it cook for 30 minutes or until the sago is transparent. Then drain and rinse the sago again, to eliminate the "drool" from it. In the blender, place the condensed milk and coconut milk and beat until blended. Place in a large bowl, add the drained sago and mix everything together. Apart from peeling and chopping the fruit you want to use - the fruit option is up to you, use whatever you have at home! In this case I used different types of melon that I separated using a spoon for fruit balls (fruit baller), and so I got a gourmet touch on this dessert! Tropical Christmas Salad recipe
Ingredients to make Tropical Christmas Salad:
• ½ bunch of iceberg or curly lettuce
• ½ bunch of arugula or watercress
• ½ cup cherry tomatoes or grape tomatoes
• 1 small sleeve
• 1 kiwi
• ½ cup of apricots
• 6 ripe strawberries
• mint leaves (to taste)
• 2 tablespoons of shredded gorgonzola cheese (optional)
• fresh Parmesan cheese shavings (to taste)
Yogurt Salad Dressing:
• juice of 1 medium orange
• 1 pot of natural yogurt (170 grams)
• 2 tablespoons of honey
• 1 pinch of salt
How to make Tropical Christmas Salad:
Start by sanitizing the fruits and vegetables, washing them in running water and leaving them to soak for a few minutes in a solution of water with sodium hypochlorite. After this time, drain and rinse thoroughly.
Peel the fruits and chop them or cut them into slices. Use and abuse your creativity to make your salad very colorful and cheerful!
Dry the leaves a lot with the help of a paper towel or in a centrifuge suitable for drying vegetables, as in the photo. Reserve.
Spread the dried leaves on a wide platter. Leave the leaves whole to give more elegance to the dish and, if you want, tear the large lettuce leaves.
Add the fruit over the leaves as desired. If you prefer, separate them by color or texture too! Add the shredded Parmesan cheese and the shredded gorgonzola cheese. Cover with plastic wrap and place in the fridge.
Prepare your salad dressing by combining all the ingredients in a bowl: orange juice, yogurt, honey and salt. Keep the dressing in the fridge until it's time to serve your salad!
Drizzle some of the sauce over your fruit salad for Christmas when you serve supper and leave some of the sauce in the gravy boat, so your guests can help themselves when they taste this delicious salad!
