Sometimes I get so absorbed in videos that I almost forget pictures are just as important. Here is a simple recipe:

Chow mein with a Jamaican twist 🇯🇲🔥 – packed with flavor, quick to make, and way better than takeout. I used chicken as the protein but you can swap in shrimp, beef, or keep it veggie. This one is a family favorite and perfect for weeknight dinners. 🍜✨

Jamaican-Style Chicken Chow Mein Recipe

Ingredients (4 servings):
• 2 chicken breasts, thinly sliced
• 2 tbsp soy sauce
• 1 tbsp oyster sauce
• 1 tsp jerk seasoning (optional for spice)
• 2 tbsp vegetable oil
• 2 garlic cloves, minced
• 1 medium onion, sliced
• 1 small carrot, julienned
• 1 cup cabbage, shredded
• 1 bell pepper, sliced (red or green)
• 2 stalks green onion, chopped
• 200g chow mein noodles (cooked according to package)
• 1 tbsp dark soy sauce (for color + flavor)
• 1 tsp sesame oil (optional)

Method:
1. Marinate chicken in 1 tbsp soy sauce, ½ tbsp oyster sauce, and a pinch of jerk seasoning (15–20 min).
2. Heat oil in a wok or large pan over medium-high heat. Stir-fry chicken until browned and cooked through, remove and set aside.
3. In the same pan, add garlic, onion, carrot, cabbage, and bell pepper. Stir-fry 2–3 min until slightly tender but still crisp.
4. Add noodles, the remaining soy sauce, oyster sauce, dark soy sauce, and sesame oil. Toss well.
5. Return chicken to the pan, toss everything together for 1–2 minutes.
6. Top with green onions and serve hot.

💡 Tip: A little Scotch Bonnet pepper sliced thin adds an authentic Jamaican kick – but use carefully!

Today marks a special milestone: I have reached 13,000 subscribers on YouTube! It's incredible to reflect on this journey, which started back in late 2017 when I posted my first video about how to make chicken wings in the Instant Pot, all while figuring out my career path.

For me, photography and being creative with music have always been outlets of expression. I never really considered myself a content creator; I simply hit record and shared what I made. Now, I find myself with over 13,000 subscribers and more than 2.6 million views on YouTube alone.

There are so many ways I would like to express my gratitude, but the biggest thanks goes to my family. They've supported me through all the lighting and camera setups, as well as the recipe experiments that didn’t always turn out well. They still taste everything and kindly say, “Not bad,” even when they know it might be a flop!

What I really want to say is thank you to my family for sharing in this milestone with me. XOXO!

Greek Nights on the Grill 🇬🇷🔥”
Juicy chicken, zesty Greek dressing, and a medley of peppers & onions… all kissed by the BBQ for that perfect summer char!

✨ What You’ll Need:
• Chicken breast (cubed)
• Greek dressing (for marinade)
• Garlic seasoning
• Italian seasoning
• Bell peppers (variety of colors)
• Onion (chunky pieces)

🔥 How to Make It:
1️⃣ Marinate Magic – Toss chicken cubes in Greek dressing, garlic seasoning, and Italian seasoning. Let it soak for at least 30 mins (overnight = chef’s kiss).
2️⃣ Skewer & Stack – Alternate chicken, peppers, and onion onto skewers for color and flavor.
3️⃣ Grill to Thrill – BBQ on medium heat until chicken is cooked through and lightly charred (about 10–12 min, turning often).
4️⃣ Serve & Savor – Plate it up with tzatziki, pita, or over a fresh salad.

💡 Pro Tip: Save some Greek dressing to drizzle over the kababs right before serving for extra flavor.

Last week, I had the opportunity to spend time with friends and colleagues at an annual BBQ. Perfect with rice or bread!

🍴 RECIPE BELOW ⬇️

Ingredients:
• 1 lb stewing beef (cubed)
• 1 onion (diced)
• 4 garlic cloves (minced)
• 1 tsp cumin
• 1 tsp coriander
• 1 tsp garlic salt
• 1/2 tsp black pepper
• 2 tbsp tomato paste
• 1 cup canned diced tomatoes
• 1 cup fresh diced tomatoes
• 2 tbsp oil
• 1 cup water or broth

🧑🏽‍🍳 How to Make It:
1️⃣ In a pot, heat oil and sauté onions until soft.
2️⃣ Add garlic, cumin, coriander, garlic salt, and black pepper. Stir for 1 min.
3️⃣ Add beef and sear until browned on all sides.
4️⃣ Mix in tomato paste, diced tomatoes (both canned & fresh), and stir well.
5️⃣ Add water or broth, cover, and simmer on low heat for 1–1.5 hours until beef is tender.
6️⃣ Taste and adjust seasoning if needed.

🔥 Serve with rice, couscous, or warm bread.
