📸 Egyptian Kamounia (Beef Stew) 🇪🇬
Hearty. Spiced. Full of flavour.
Perfect with rice or bread!

🍴 RECIPE BELOW ⬇️

Ingredients:
• 1 lb stewing beef (cubed)
• 1 onion (diced)
• 4 garlic cloves (minced)
• 1 tsp cumin
• 1 tsp coriander
• 1 tsp garlic salt
• 1/2 tsp black pepper
• 2 tbsp tomato paste
• 1 cup canned diced tomatoes
• 1 cup fresh diced tomatoes
• 2 tbsp oil
• 1 cup water or broth

🧑🏽‍🍳 How to Make It:
1️⃣ In a pot, heat oil and sauté onions until soft.
2️⃣ Add garlic, cumin, coriander, garlic salt, and black pepper. Stir for 1 min.
3️⃣ Add beef and sear until browned on all sides.
4️⃣ Mix in tomato paste, diced tomatoes (both canned & fresh), and stir well.
5️⃣ Add water or broth, cover, and simmer on low heat for 1–1.5 hours until beef is tender.
6️⃣ Taste and adjust seasoning if needed.

🔥 Serve with rice, couscous, or warm bread.

🧡 Easy Sweet & Sour Chicken Recipe 🍍

Crispy chicken + a homemade sweet-and-sour sauce = takeout at home made easy!

🐔 Ingredients (for chicken):
• 2 boneless chicken breasts, cut into bite-sized pieces
• 1/2 cup cornstarch
• 2 eggs, beaten
• Salt & pepper to taste
• Oil for frying

🍯 Sweet & Sour Sauce:
• 1/3 cup ketchup
• 1/2 cup white vinegar
• 1/2 cup sugar
• 1 tbsp soy sauce
• 1 tbsp cornstarch + 2 tbsp water (for thickening)
• Optional: 1/2 cup chopped pineapple + 1/2 chopped bell pepper for extra flavour



👨🏾‍🍳 Instructions:
1. Coat the chicken: Season chicken with salt and pepper. Dip each piece in cornstarch, then into the beaten eggs.
2. Fry: Heat oil in a pan and fry chicken pieces until golden and crispy. Set aside.
3. Make the sauce: In a pan over medium heat, mix ketchup, vinegar, sugar, and soy sauce. Bring to a simmer.
4. Thicken: Mix cornstarch with water, then stir into the sauce until it thickens.
5. Toss & serve: Add fried chicken to the sauce and toss to coat. Add pineapple or bell peppers if using.
6. Enjoy over rice, noodles, or on its own!

Tonight was all about keeping it quick but full of flavour. I made a simple pork roast paired with Greek-style potatoes — juicy, tender, and packed with that lemony herb goodness. Nothing fancy, just real, comforting food that hit the spot!



🔥 Easy Pork Roast with Greek Potatoes (Weeknight Winner)

Ingredients:
For the Pork:
• 1 pork roast (about 1.5–2 lbs)
• 2 tbsp olive oil
• 1 tbsp garlic powder
• 1 tsp oregano
• 1 tsp paprika
• Salt & pepper to taste

For the Potatoes:
• 4–5 yellow potatoes, cut into wedges
• Juice of 1 lemon
• 3 tbsp olive oil
• 1 tsp oregano
• 3 cloves garlic, minced
• Salt & pepper
• Optional: chicken broth (½ cup) for added flavour and moisture

Quick Directions:
1. Preheat oven to 400°F (200°C).
2. Season pork with oil, garlic powder, oregano, paprika, salt & pepper.
3. Toss potatoes with lemon juice, olive oil, oregano, garlic, salt & pepper.
4. Arrange pork in a roasting dish, surround it with potatoes. Add broth if using.
5. Bake uncovered for 45–60 mins, or until pork is cooked through (internal temp 145°F).
6. Rest pork for 5–10 minutes before slicing. Serve with potatoes and spoon over the pan juices.

After a full weekend of being on the water and enjoying the fantastic weather, we returned home, and I needed to whip up something quick for dinner. I seasoned chicken breasts and pan-fried them, while also preparing some basmati rice with a few Indian-inspired spices, accompanied by fresh corn since it's in season. Thirty minutes later, dinner was ready, and everyone was happy. Now, it's time to prepare for the kids' school week and recharge for the week.
