Sometimes I get so absorbed in videos that I almost forget pictures are just as important. Here is a simple recipe:

Jamaican-Style Chicken Chow Mein Recipe
Ingredients (4 servings):
• 2 chicken breasts, thinly sliced
• 2 tbsp soy sauce
• 1 tbsp oyster sauce
• 1 tsp jerk seasoning (optional for spice)
• 2 tbsp vegetable oil
• 2 garlic cloves, minced
• 1 medium onion, sliced
• 1 small carrot, julienned
• 1 cup cabbage, shredded
• 1 bell pepper, sliced (red or green)
• 2 stalks green onion, chopped
• 200g chow mein noodles (cooked according to package)
• 1 tbsp dark soy sauce (for color + flavor)
• 1 tsp sesame oil (optional)
Method:
1. Marinate chicken in 1 tbsp soy sauce, ½ tbsp oyster sauce, and a pinch of jerk seasoning (15–20 min).
2. Heat oil in a wok or large pan over medium-high heat. Stir-fry chicken until browned and cooked through, remove and set aside.
3. In the same pan, add garlic, onion, carrot, cabbage, and bell pepper. Stir-fry 2–3 min until slightly tender but still crisp.
4. Add noodles, the remaining soy sauce, oyster sauce, dark soy sauce, and sesame oil. Toss well.
5. Return chicken to the pan, toss everything together for 1–2 minutes.
6. Top with green onions and serve hot.
💡 Tip: A little Scotch Bonnet pepper sliced thin adds an authentic Jamaican kick – but use carefully!
