Red Cabbage Slaw w/ Peachin’ Ain’t Easy 🍑🌶️

This smoky & sweet slaw is the perfect partner for BBQ. The Peachin’ Ain’t Easy rub brings a balance of sweet peach and gentle heat, which plays beautifully against the earthy, nutty tones of red cabbage. A creamy dressing pulls everything together, creating a refreshing, crunchy side that doubles as a mouth-watering topping for pulled pork sandwiches. Add cheese and bacon for an even more indulgent twist.

Servings: 12 as a side, 20-24 as a topping

Ingredients
• ½ head red cabbage (about 1.5 lbs), thinly sliced
• ½ lb shredded carrots
• ½ cup sour cream
• ½ cup mayonnaise
• 2 tbsp Peachin’ Ain’t Easy rub
• 2 tbsp brown sugar
• 2 tbsp apple cider vinegar
• 2 tsp celery seeds
• 1 tbsp Dijon mustard
• ½ cup chopped fresh parsley

Optional Add-Ins
• 1 cup shredded cheese
• 1 lb bacon, cooked and crumbled
• 2 tbsp rendered bacon fat (whisked into dressing)



Method
1. Prep the vegetables: Quarter the red cabbage, remove the core, and slice thinly. Grate or shred carrots if not pre-shredded. Finely chop the parsley.
2. Make the dressing: In a large bowl, whisk together mayo, sour cream, Peachin’ Ain’t Easy, brown sugar, vinegar, celery seeds, and Dijon until smooth.
3. Combine: Add cabbage, carrots, and parsley to a salad bowl. Pour over the dressing and toss until evenly coated.
4. Chill: Cover and refrigerate for 15 minutes to allow flavors to meld.
5. Optional indulgence: Stir in shredded cheese, bacon bits, and bacon fat for a smoky, rich twist.



🔥 Serving Tip: Pile high on pulled pork sandwiches or serve as a refreshing BBQ side.

How To Make My Smoked Bone Marrow Truffle Butter 🧈🦴🍄‍🟫

Finally sharing this .. this is for 1 pound of butter but I usually make 3-5. Let’s go!

1 pound salted butter - room temp
1 tbsp White Truffle Oil
1 head of smoked garlic chopped
1 small shallot minced
1 tbsp Mexican oregano
1/2 tbsp of my herb you been talking sh*t
1/2 cup chopped parsley
2 or more beef bones w/marrow ( I usually
smoke a couple pounds of bones and use
them to make beef stock after)

- First things first set your butter on the counter to warm up, it needs to be room temp

- Coat your beef bones with olive oil and lightly season them with my Herb You Been Talking Sh*t

- Smoke the bones at 250 on a rack over a pan to catch drippings for 3 hours

- Drain all the fat from the pan in to a sauce pan and knock the marrow out of the bones in to the pot as well

- Turn your burner to medium/low and bring the fat to a very soft simmer

***We’re only going to simmer and render this marrow for about 5 minutes so you want to add these ingredients consecutively***

- Add the rest of the prepped and measured ingredients EXCEPT parsley and let them poach for 5 minutes

- Remove the pan from heat and let cool to a temp where it won’t melt the butter

- Once cool, add the parsley to the fat and then add the softened butter

- Use your stand mixer or egg beaters to whip the butter and rendered marrow mixture evenly

- Spread butter in to casserole tins/dishes lined with wax paper or roll it in to logs with Saran Wrap and let cool for a few hours or til the next day

- Once cool, cut and portion your butter in to what ever size you like. Don’t freeze it in Saran because the plastic can break on the ends. I usually wrap it in wax paper or vacuum seal it. Whatever you use make sure it’s freezer safe

- This will keep for up to 5 days in the fridge or several months in the freezer

You can use this for anything, steaks, vegetables, frying eggs, buttering toast/sourdough, popcorn.. You name it!

Keep all the bones and crock pot them over night and make your self an amazing beef broth !

Hey hey !!!! It’s been a busy 2025, crazy to think we’re already in the 4th month 🥲 time flies when you’re having fun right ?! Here’s a little update of what we got brewing over at Uncle Hemmy’s!!

We’re gong to be launching some Bbq rubs ! That’s right! It’s been a long time coming but I’m happy to announce we’ve got 3 flavours! 2 i have used for a bit and one is brand new! As soon as the’yre available I will do my best to share the hell out of it and make sure you all can get some of that Hemmy goodness on your grill at home!
