Red Cabbage Slaw w/ Peachin’ Ain’t Easy 🍑🌶️
This smoky & sweet slaw is the perfect partner for BBQ. The Peachin’ Ain’t Easy rub brings a balance of sweet peach and gentle heat, which plays beautifully against the earthy, nutty tones of red cabbage. A creamy dressing pulls everything together, creating a refreshing, crunchy side that doubles as a mouth-watering topping for pulled pork sandwiches. Add cheese and bacon for an even more indulgent twist.
Servings: 12 as a side, 20-24 as a topping
Ingredients
• ½ head red cabbage (about 1.5 lbs), thinly sliced
• ½ lb shredded carrots
• ½ cup sour cream
• ½ cup mayonnaise
• 2 tbsp Peachin’ Ain’t Easy rub
• 2 tbsp brown sugar
• 2 tbsp apple cider vinegar
• 2 tsp celery seeds
• 1 tbsp Dijon mustard
• ½ cup chopped fresh parsley
Optional Add-Ins
• 1 cup shredded cheese
• 1 lb bacon, cooked and crumbled
• 2 tbsp rendered bacon fat (whisked into dressing)

Method
1. Prep the vegetables: Quarter the red cabbage, remove the core, and slice thinly. Grate or shred carrots if not pre-shredded. Finely chop the parsley.
2. Make the dressing: In a large bowl, whisk together mayo, sour cream, Peachin’ Ain’t Easy, brown sugar, vinegar, celery seeds, and Dijon until smooth.
3. Combine: Add cabbage, carrots, and parsley to a salad bowl. Pour over the dressing and toss until evenly coated.
4. Chill: Cover and refrigerate for 15 minutes to allow flavors to meld.
5. Optional indulgence: Stir in shredded cheese, bacon bits, and bacon fat for a smoky, rich twist.
