Smoked Butternut Squash Soup 🥣
Now that the new spice blends are complete, time to get back in the kitchen and create again!
Equipment
• Baking sheet
• Smoker or grill
• 6-quart Dutch oven or stock pot
• Immersion blender
Ingredients
• 2 butternut squash
• 1 head smoked garlic
• 3–4 shallots
• 2 cups prepared Better Than Bouillon chicken stock
• Herb You Been Talkin’ S*t* seasoning, to taste
• Cracked black pepper
• 1 cup heavy cream
• Feta cheese (approximately 2 tbsp per serving)
• Fresh cilantro & Garlic buttered sourdough, optional

Instructions
1. Prepare the vegetables
Cut squash in half, peel, deseed, and cut into quarters.
Peel and halve the shallots.
2. Prepare the garlic
If using fresh garlic, peel the cloves and spread them on the baking sheet.
3. Season and smoke
Lightly coat vegetables with olive oil and season squash generously with Herb You Been Talkin’ S*t*.
Smoke vegetables for approximately 1 hour.
4. Simmer
Transfer smoked vegetables to a Dutch oven. Add chicken stock, cover, and gently simmer until squash is fork-tender, about 15 minutes.
5. Blend
Reduce heat to low and blend soup until smooth using an immersion blender. Season to taste.
6. Finish and serve
Stir in heavy cream. Serve warm, topped with cracked pepper, feta cheese, and optional garlic buttered sourdough & cilantro.
