In the Philippines, a traditional treat made from rice flour and sesame sugar is known as "mwasi". Mwasi is a Filipino delicacy, where it’s enjoyed as a sweet snack.

Here’s a bit about mwasi and how it's made:

Ingredients: Mwasi is made with sticky rice flour, which is shaped into flatten small balls and topped with a sweet mixture of brown sugar and sesame seeds for an extra nutty and sweet flavor.

Preparation: The dough is made by mixing glutinous rice flour with water until it forms a smooth, pliable dough. Form smaller balls from the dough and flatten into 3 inches diameter. Submerge it into boiling water. It's cooked when it floats. Let it cool before serving.

Flavor and Texture: The sticky, chewy texture of the rice flour combines beautifully with the crunchy, sweet filling, making it a beloved comfort food for Filipinos, especially around All Souls' Day and other gatherings.

Masi and other rice-based snacks like it are a staple during Undas, enjoyed by families as they gather to remember their loved ones on November 1.

Atchara (or Atsara) is a traditional Filipino pickled condiment made from grated unripe papaya. It is a popular side dish in the Philippines, often served with grilled or fried dishes like fish, chicken, pork, or even with breakfast items such as longganisa (Filipino sausage) or tocino (sweet cured pork).

Ingredients:
- Unripe Green Papaya: The main ingredient, which is shredded or grated into fine strips.
- Vinegar: Provides the pickling base and tangy flavor.
- Sugar: Balances the sourness of the vinegar with sweetness.
- Carrots: Often included for color and texture.
- **Red Bell Peppers**: Adds flavor and color.
- Raisins: Sometimes added for a touch of sweetness and texture.
- Garlic and Ginger: Infuses the pickling liquid with a warm, aromatic flavor.
- Onions: Often thinly sliced and added for flavor.
- Salt: Used to cure the papaya before pickling and to season the atchara.

Preparation:
1. Salting the Papaya: The grated papaya is mixed with salt and left to sit for a few hours to draw out moisture. Afterward, it is rinsed and squeezed to remove excess liquid.

2. Cooking the Pickling Solution: Vinegar, sugar, and spices (such as garlic and ginger) are simmered together to create the pickling liquid.

3. Mixing and Pickling: The prepared papaya and other vegetables are combined with the pickling solution and placed in sterilized jars.

4. Curing: Atchara is typically left to sit for at least a few days to allow the flavors to meld before it is consumed.

Flavor Profile:
Atchara is known for its refreshing, tangy-sweet taste, with a crunch from the papaya and vegetables. The combination of vinegar, sugar, and spices gives it a well-balanced flavor that complements the savory and fatty elements of grilled or fried meats.

Storage:
Atchara can be stored in the refrigerator for several weeks, and its flavor often improves over time as it continues to marinate.
