Molasses Cookies
Ingredients
* ½ cup softened butter
* ½ cup brown sugar, packed
* 1 egg
* ½ cup molasses
* 1¾ cups all-purpose flour
* 1 tsp baking soda
* 1 tsp ground cinnamon
* ½ tsp ground ginger
* ¼ tsp ground nutmeg
* ¼ tsp salt
* ¼ cup milk
Directions
1. Preheat the oven to 350°F (180°C).
2. Cream the butter and brown sugar until light and fluffy.
3. Beat in the egg, then stir in the molasses.
4. In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt.
5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. The dough will be soft and slightly sticky.
6. Drop rounded 2-tablespoon portions of dough onto a parchment-lined baking sheet.
7. Sprinkle with coarse sugar, if desired.
8. Bake for 11–13 minutes, or until the cookies are set around the edges but still soft in the centre.
