Eating our way through Niagara-on-the-Lake 🥂

Salvadoran Budín 🍌

✨ Ingredients:
• 4 buns
• 3 ripe bananas (plus more for decorating)
• 1 egg
• 2 cups of milk
• 2 tablespoons of sugar
• 1 tablespoon vanilla
• 1 teaspoon baking powder
• 1/2 teaspoon cinnamon
• Pinch of salt

✨ For the caramel:
• 1 1/2 cups granulated sugar
• 1/4 teaspoon ground cloves

✨ Step-by-step:
1. Preheat oven to 350°F (175°C).
2. In a pan, melt the sugar over medium heat until it turns into a golden caramel.
3. Add cinnamon and ground cloves, mix gently, and pour into your baking dish. Set aside.
4. Mash the bananas in a bowl.
5. Add the egg and sugar, and mix well.
6. Add cinnamon and a pinch of salt.
7. Cut the buns into pieces with your hands and add them to the mixture.
8. Pour in the milk and mix.
9. Add the baking powder and mix again.
10. Add vanilla and mix until everything is well combined.
11. Pour the mixture over the caramel in the baking dish.
12. Optional: decorate the top with banana slices.
13. Bake for 40–50 minutes, or until set.
14. Let it cool slightly, then flip and serve.

It’s been three years since our last trip to Spain — still probably my favourite trip so far.

The food. The culture. The long walks through the streets, admiring the beautiful architecture that made every corner feel like art.
