Cornchaff (Cornchi) is one of those meals that instantly takes me back to boarding school. 😊🇨🇲

I went to St. Bede’s College, Ashing-Kom, where we had Cornchaff at least twice a week. Every bite still brings back those memories.

I used popcorn kernels as a substitute for dried corn. They worked beautifully and are cheaper than dried corn here abroad.

I used black beans, but kidney beans work just as well. A pressure cooker also cuts the cooking time significantly.

Served with smoked fish and a refreshing glass of Foléré (Hibiscus drink)🇨🇲

Making ekwang abroad just got a little easier. 🌿

I used Malabar spinach as a substitute for cocoyam leaves and ground my cocoyams with a food processor to cut down on prep time. Both worked beautifully, and honestly, there was no difference in taste.

I hope these two tips are helpful. If you make ekwang abroad, I’d love to know what other leaf substitutes have worked well for you. 🇨🇲

There are some things you simply can’t replace, no matter where life takes you. ❤️🇨🇲

When family visits from Cameroon, they never come empty-handed. 😄

Some of the food items in the haul included eru, garri, macabo, smoked fish, dried snails, and yes, even the legendary “Sacs & Motors” shopping bag.

These aren’t just food items. They represent traditions, memories, and the meals many of us grew up eating.
