🥥🌶️ Basa Fish Coconut Curry

🛒 Ingredients
• 2–3 basa fish steaks
• 1 medium onion (sliced)
• 3 cloves garlic (minced)
• 1 thumb-size ginger (minced or sliced thin)
• 1–2 tbsp curry powder
• 1 tsp paprika
• ½ tsp garlic powder
• 1 tbsp tomato paste
• 1 cup coconut milk
• 1–2 chilis (sliced)
• 1–2 heads bok choy (chopped)
• 1–2 tsp fish sauce
• 1–2 tsp sugar
• Salt & pepper (to taste)
• 1–2 tbsp oil

👩‍🍳 Instructions
1. Season the fish
Lightly season basa with salt, pepper, and a tiny sprinkle of garlic powder. Set aside.
2. Sauté aromatics
Heat oil in a pan over medium heat.
Add onion → cook until soft.
Add garlic & ginger → sauté until fragrant.
3. Build the flavor base
Add tomato paste and cook for 1–2 minutes (this removes raw taste).
Add curry powder, paprika, and remaining garlic powder.
Stir and toast for about 30 seconds.
4. Make it creamy
Pour in coconut milk and stir well.
Add fish sauce, sugar, and chilis.
Bring to a gentle simmer.
5. Cook the fish
Carefully place basa steaks into the sauce.
Simmer on low for 6–8 minutes. Do not over-stir.
6. Add bok choy last
Add bok choy during the last 2–3 minutes.
7. Serve with hot rice 🍚

Biscoff-y Banana Biscoff Pudding recipe 🍌🍪

Ingredients
• 2 ripe bananas, sliced
• 1 cup plain yogurt (use thick yogurt if you can)
• ⅓–½ cup evaporated milk (add slowly)
• ½–1 cup crushed Biscoff biscuits
• 3–4 tbsp Biscoff spread (this is the star 😉)
• 2 tbsp powdered milk (for thickness)
• 1–2 tbsp honey (optional)
• ½ tsp cinnamon (optional)

🥣 Instructions

1️⃣ Make the Cream Base
In a bowl, mix:
• Yogurt
• 3–4 tbsp Biscoff spread
• ⅓ cup evap milk (add gradually)
• Powdered milk
• Honey + cinnamon (if using)

Mix until smooth and thick.
👉 If it looks thin, add 1 more tbsp powdered milk.

2️⃣ Layer
• Crushed Biscoff (bottom layer)
• Cream mixture
• Banana slices
• Repeat layers
• Finish with crushed Biscoff on top

Optional: Warm 1 tbsp Biscoff spread slightly and drizzle on top for swirl effect.

3️⃣ Chill
Refrigerate 4 hours or overnight (best texture).
If too soft, 30–45 mins in freezer first, then move to fridge.

Coconut Chicken Curry Recipe

Ingredients
• 500 g chicken thighs, cut into pieces
• 2 tbsp oil
• 1 onion, sliced
• 3 cloves garlic, minced (fresh)
• ½ tsp garlic powder
• 1 tsp curry powder
• ½ tsp turmeric powder
• ½ tsp ginger powder
• 1–2 tbsp tomato paste
• 1 tbsp fish sauce (adjust to taste)
• 1 can (400 ml) coconut milk
• Salt & pepper, to taste
• Chili (optional)
• Parsley, chopped (for garnish)

Instructions
1. Brown the chicken
Heat oil in a pan. Season chicken with salt & pepper. Fry until lightly browned on all sides. Remove and set aside.
2. Sauté aromatics
In the same pan, sauté onion until soft. Add fresh garlic and cook 30 seconds until fragrant.
3. Bloom spices
Add garlic powder, curry powder, turmeric, and ginger powder. Stir 20–30 seconds to release their aroma.
4. Add tomato paste
Stir in tomato paste and cook 1–2 minutes until it darkens slightly.
5. Build the sauce
Pour in coconut milk, scraping up any browned bits from the pan. Add fish sauce and stir.
6. Return chicken
Add the browned chicken back to the pan. Bring to a gentle simmer.
7. Simmer
Cover and cook on low heat 20–25 minutes until chicken is tender and sauce thickens. Taste and adjust salt, pepper, or fish sauce.
8. Finish & garnish
Add chili if desired. Sprinkle parsley on top before serving.
