I don’t often have this part of the fish cleaning job! 🤣 Kudos to my T who picked the fish up and did the hardest work of cleaning. Proud of her. And the fishers are alright. 🎣❤️‍🩹
There’s nothing like fresh Lake Erie Pickerel! 😋Thankful it was kept on ice and not wasted! Deboned now and ready for the fryer!

Plans vs. Reality: 😂 I had planned on working on my sourdough cinnamon rolls made with 50-year-old sourdough starter and instead…

I’m going to be deboning some fresh pickerel/walleye from Lake Erie! Happy to have both, but it does take me a bit of time to meticulously process the fish! Boneless, every bite!

Good problem to have, right?

𝓢𝓸𝓾𝓻𝓭𝓸𝓾𝓰𝓱 𝓓𝓲𝓼𝓬𝓪𝓻𝓭 𝓦𝓪𝓯𝓯𝓵𝓮𝓼 These waffles are crispy on the outside and moist and delicious every bite! This is a terrific way to use up 230 grams of sourdough discard - and have a delicious breakfast!

I was still in my pyjamas when I tucked into these! 😂 couldn’t wait!

🤞100 g for Focaccia (ready in a couple days!)
🤞150 g for Dinner Rolls (ready in 1 hr)
🤞230 g for Waffles! (Breakfast today!)

🫘 𝗖𝗵𝗶𝗹𝗶 𝗖𝗼𝗻 𝗖𝗮𝗿𝗻𝗲 - This is the perfect rainy day comfort food. I like meals that come together easily then I can “set it and forget it.”

I made it mild but you can pepper up with some dried crushed chilis or cayenne! 🌶️

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀

A good spray of Avocado Oil (1 Tbsp)
1 large chopped onion
1 green pepper chopped
1 Tbsp butter
1 lb Lean ground beef
1 can of tomato paste
1 can of diced tomatoes
1 can of white or red kidney beans, drained and rinsed
1 Tsbp Mild Chili Powder
Kosher salt to taste

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀
1) Sauté onions and green pepper over medium heat.
2) Before finishing, add butter to caramelize veggies a little.
3) When cooked, put veggies in a pot or slow cooker.
4) Brown the meat in the same frying pan used for veggies.
5) Add kidney beans, diced tomatoes & tomato paste to the pot/slow cooker.
6) Add spices to tomato mixture. Add 1/4 tsp of baking soda. Stir.
7) Add browned meat (first, drain off fat if needed) to tomato mixture.
8) Simmer on low for at least 2 hours.

𝗦𝗲𝗿𝘃𝗲 𝘄𝗶𝘁𝗵:
Shredded cheese, sour cream, sliced avocado 🥑 , tortilla chips, French bread or Caesar salad. So many options!

I didn’t get to join the fishing crew today but I got to help prep these beautiful fillets for a delicious dinner when they brought them home!

We used Clubhouse Beer Batter with an IPA in the coating. It was so delicious.

Thanks to my bil for getting some French fries from Fritzies to make it a meal! I was busy deboning the fish for a while. It’s worth the effort to be meticulous for future enjoyment. Great catches!! Pickerel/walleye is so mild (just remember to remove “the zipper!”) 😉

𝗖𝗼𝘂𝗻𝘁𝗿𝘆 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗦𝘁𝗲𝘄 10/10! It’s budget-friendly, belly-warming and super tasty! Always a crowd pleaser too.

I used my brand new 7 quart Dutch oven so I could cook this low and slow but you can do this all in a slow cooker too!

𝗙𝗼𝗹𝗹𝗼𝘄 𝗳𝗼𝗿 𝗺𝗼𝗿𝗲 𝗲𝗮𝘀𝘆 𝗿𝗲𝗰𝗶𝗽𝗲 𝗶𝗱𝗲𝗮𝘀!

𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
- 3 lbs of boneless, skinless chicken, chopped (I prefer chicken breast but thighs work too)
- 1 onion, diced
- 6 medium potatoes, skin on
- 4 carrots, peeled & sliced
- 3 ribs celery, sliced
- 2 cans cream soup (I used one cream of mushroom and one cream of celery)
- 4 cups chicken broth + 1/4 cup reserved for later
- 1 tsp dried thyme
- 1 tsp kosher salt
- 1 tsp black pepper
- 2 bay leaves

Final 5 Minutes:
- 1 cup frozen peas
- 1/4 cup broth mixed with 1/4 cup cornstarch

✅ Whether you’re using a Dutch oven or a slow cooker, start with cooking the chicken about 3 mins per side before adding anything else to your pot.

🤘 Mine cooked in 50 mins in Dutch oven but for a slow cooker, you can cook for 9-10 hrs on Low or 4.5-5 hrs on High.
