Road trip Day 7: Today is the Big Day! Tire Nurse is graduating with her Master of Arts in Counselling Psychology. She’s been working so hard for this moment and I’m glad we were able to come out all this way to Fredricton, NB to make it official and attend the Ceremony! It was such a great moment that will be cherished forever. Ya know, sometimes I think ā€œI couldn’t possibly love this girl anymore than I already doā€ but through these past couple of years she’s shown how very wrong I was. Her dedication to everything she does is beyond words, and let’s not forget that she’s probably the kindest human you’ll ever meet, like… ever. She makes me a better person and there’s nowhere I’d would rather be than by her side through it all. I’m soooo proud of my Future Wife šŸ’. After the Ceremony we went for a celebratory dinner with some delicious eats at Moco, made our way 2 hours south to Seaside Beach Resort and stayed at the tiniest little cottage I’ve ever seen. The view was amazing and to be honest there was lots of room in here. We were right beside the water connecting to Bay of Fundy and the tide was SO low at sun set we even saw a ship wreck 😱. Tonight we decide what we are doing the next 4 days as we didn’t make a schedule for after graduation! To Be Continued…

Road trip day 6: Before heading off the island we explored the waterfront in front of our dome. Pretty rocksss! Our boatman recommended we check out Ardmore Tea Room for breakfast and that was a great local eat! We stopped in Halifax and took a walk on the harbour front, such a beautiful city. Got back in the car and drove straight to Fredricton NB to stay at a hotel across the street from the convention centre where Tire Nurse will be going tomorrow for her Graduation Ceremony! We had a quick bite before heading to bed, pretty chill day today. Tomorrow is the BIG DAY and the main reason we took this road trip! To Be Continued…

Road trip day 5. We woke up at 8:30am had some breakfast at Markland before heading out to finish the second half of the Cabot Trail. This half was by far the most beautiful and we stopped many times to take photos and also went on a little hike along the way. It took up most of the day so we booked it down towards our Domes at West Dover where we boarded a little boat and sailed off to the island 5 minutes away. What an amazing experience this was, we had our own little hot tub and view of the water a fire pit where we roasted some yummy marshmallows (of course) Went to bed and we’re waking up and heading off the island at 10am to check out Halifax and heading up to Fredricton NB for something special! Road trip day 4: We woke up at 5:30am to catch the ferry from PEI to Nova Scotia because we are headed straight to a bird boat tour for 1:45pm to see Puffins and Seals! Tire Nurse has never seen a seal before and we both have never seen a puffin šŸ˜† now let’s keep in mind that Tire Nurse also gets extremely car sick and hasn’t really been on a boat like this before aaand as expected she got very sick but she made it out with many many puffin and seal sightings and also these were some of the best boating crew I’ve personally experienced. After the boat we headed towards the Cabot trail and stopped at a nice spot for lunch called Cedar House bakery and restaurant and of course, had my two favourite things mozzarella sticks and chicken fingers for lunch. We got back in the car and took a little 30 minute nap in the parking lot because well… naps are just great 😓After that, we travelled through the Cabot Trail all the way up to the northern point to stay at a cottage called Markland. Got there just in time before they closed the restaurant and we ate some amazing food. I got the T-Bone steak and she got the golden squash ravioli. ALSO I tried asparagus for the first time and liked it! (Crazy) went to bed and for the first time actually got to sleep in a little bit. We’re getting up at 8:30am tomorrow morning to head towards Peggy’s Cove and stay at a Dome on an Island!

Day 3 of our road trip: PEI exploration day! We took off from the West Point lighthouse at 5:30am and headed over to Cavendish to walk on the beach and take pictures of cool red rocks in the rain, stopped in north rustico to get a cappuccino for me and a macha latte for The Tire Nurse before heading down to Charlottetown to try my first ever Lobster Roll! (Btw I hate seafood except for like shrimp) BUT it actually was pretttty guud. We headed east towards the east point lighthouse and stopped at the ā€œsinging beachā€ and was lucky enough to hear the ā€œsingingā€ (if it’s too wet apparently it doesn’t work but we found a dry spot!) checked out the east lighthouse and to top it all off with a massive BANG we had a 6 hour fire feast at Chef Micheal smiths farm to table restaurant at the Inn at Bay of Fortune. The pictures alone will tell you the whole story… mind BLOWN! Tire Nurse and I also tried our very first oyster with Chef Micheal Smith. What an experience this was and we will forever cherish the dedication that him and his team puts into their food and DON’T even get me started about Nick the Forager. The passion he has for foraging, growing and harvesting sustainably with over 700 different plants around PEI is out of this world. He brought us all on a little journey about his own experiences and explained how they ferment things to bring out the vast flavours of everything from pine cones to make syrup to oak leaves in vinegar to extract the tannins… it was very complex but so intriguing at the same time. Like I said earlier, I don’t like seafood at all. Now?? I can officially say I’ve tried Oysters, halibut, mussels, scallops, clam, AND cod and with the right ingredients they are sooo amazing. Oh and also… their salads literally had flowers in them which was like WILD because I didn’t even know you could eat flowers… like what? šŸ˜‚This was a such a life changing experience and what a way to finish off the day in PEI. (Homemade marshmallows at the end too… omgggg šŸ˜†) After the dinner we headed to our little Bed and breakfast with the sweetest old lady that’s ever lived as our host. We got some much needed rest (not much) as we have ANOTHER 5:30am early start to catch the ferry to Nova Scotia. To Be Continued…..

First day of the road trip starting off with an amazing little cottage at a days inn in Quebec. 10 hour drive was well worth it! This restaurant we went to was THE BEST I actually cried at how good the steak was. Also they had cheese fondue… first time trying, delicious.
