Here's a healthy tomato soup recipe
ideal for quick healthy, lunch or dinner
Ingredients include
10 ripe tomatoes,
2 large onions,
your choice of fresh herbs,
and a bulb of garlic.
Begin by chopping the ingredients and placing them in an oven tray. Cook in the oven at 350 degrees for 20 minutes.
Separately, roast carrots and celery in olive oil within a large pot.
Add the cooked tomatoes,
tomato paste,
broth (chicken or vegetable),
milk,
and roasted garlic.
Allow the mixture to cook for 15 minutes.
Finish by blending with an immersion blender, resulting in a nutritious and delicious homemade tomato soup.
