How to make tourtière, a French Canadian dish, that our family enjoys at Christmas and other special occasions. 🥧 This recipe is from Léona’s grandmother. Ben, Catherine and Mémère got together for a day for making tourtières together! We make our tourtières with our Charlotte Lake Farms beef of course.
We made 16 little ones and 14 big ones.
Léona’s Grandmother’s Tourtiére Recipe:
• 5lbs Pork
• 5lbs Charlotte Lake Farms Beef
• 2 large onions
• 5 tsp dry mustard
• 4 tsp salt
• 5 tsp thyme
• 1 1/2 tsp pepper
• 5 tsp sage
• 2 tbsp all spice
• 5 cups of mashed potatoes
Cook beef, pork, onions. Then add spices. Cook potatoes separately, mashed them. Then incorporate them into the mixture. Fill your pie crust, then cook at 400 degrees for 15min then 375 degrees for 30mins.
Pastry Recipe:
Mix together:
• 5 1/2 cup of flour
• 1 1/2 teaspoon salt
• 1 teaspoon baking powder
• 3 tablespoon brown sugar
With a pastry blender or two knives cut in until the consistency of course meal with a few large pieces. Add 1 pound of lard or shortening. Break into measuring cup and beat slightly. Add one egg, 1 tablespoon vinegar, Fill cup to 1 1/2 with cold water and blend together. With a fork, gradually still liquid mixture into flour mixture. Add only enough liquid to make dough cling together and clean easily from the bowl. Wrap tightly in plastic wrap and chill until ready to use. Makes three 9 inch double crust pie or six 9 inch pie shell.
