Griddle-Seared Brisket Smokies

What You Need:
4 all beef brisket smokies
4 brioche or hoagie buns
2 large yellow onions
Whole grain mustard
Salt & Pepper to taste
Mayo, 2 garlic cloves, lemon juice
How to Make It:
1. Caramelize your onions low & slow until golden. Start these first.
2. Make the aioli β mix mayo, grated garlic, a squeeze of lemon. Season and refrigerate.
3. Cross-hatch the smokies β score diagonal cuts 1/4β deep across all sides, rotate 90Β° and repeat to get a diamond pattern.
4. Get your griddle screaming hot. Using a dome and a little water, steam the smokies then sear on all sides until those diamond cuts caramelize and char beautifully.
5. Toast your buns cut-side down in butter until golden.
6. Build it β aioli, a big pile of caramelized onions, the smokies and a bold stripe of grainy mustard.
π₯ Pro tip: Donβt rush the sear. Let those cross-hatch diamonds develop real color before you flip.
