When Quark Expeditions and Igapall say Tundra to Table, they mean it — and our Editor Ilona Kauremszky was honoured to be a special guest at this dazzling Inuit culinary experience at the Art Gallery of Ontario.

The evening kicked off with an exclusive pre-dinner tour of the Kenojuak Ashevak Exhibition, showcasing the vibrant works of the iconic Inuit artist from Kinngait. Then guests took their seats for a once-in-a-lifetime culinary journey through the Arctic, helmed by powerhouse chefs Iben and Miki.

Each plate told a story — quite literally.

🧜‍♀️ Sassuma Arnaa (“Mother of the Sea”) opened the evening with a tidal wave of flavour: snow crab & shrimp, seaweed, lavender gel, and tomato concassé swimming in a delicate fish consommé.

🦌 Pinaiarfik (“Hunting Season”) brought the tundra to the table with deer loin, chanterelles, mulberries, and pommes fondant in a port wine embrace.

🐟 Upernaq Ukiarlu (“Fall and Spring”) celebrated Arctic contrast with poached char, trout roe, pickled mustard seeds, white asparagus, and a buttery juniper-kissed finish.

🐇 Ukallip Ullua (“Where the Rabbit Lives”) gave a gourmet nod to Easter with braised rabbit, caramelized onions, kale, and pommes purée shaped like an egg — adorable and delicious!

🍬 And finally, Aanaap Mamakujuttuutai (“Grandma’s Candies”) sweetened the night with a nostalgic mix of berry cream, Labrador tea & lemon ice, and caramelized white chocolate — a festive treat usually reserved for Christmas in Greenland.

Guests enjoyed a post-dinner Q&A with the chefs, who shared heartfelt stories behind each dish and wrapped up with a warm “Nerilluarisi” — that’s Bon appétit in Inuktitut! 🥂

From flavours to storytelling, this night proved Quark Expeditions is redefining what it means to dine on an expedition — serving up culture, connection, and cuisine like never before.

Bravo to the team for putting the Inuit culinary tradition on centre stage — for one glorious, unforgettable evening.
