Smoky Chickpea + Potato Bowl 🍲🔥
A warm, savory, and nourishing bowl to cozy up with this winter! Packed with smoky flavors, crispy potatoes, and protein-rich chickpeas, this dish is perfect for meal prep or a quick dinner.
Ingredients:
🥔 2 cans (15.5 oz) chickpeas, drained & rinsed
🔥 6 tbsp avocado oil, divided
🌶️ 2 tsp smoked or Hungarian paprika
🧂 Sea salt
🥔 4-6 Yukon gold potatoes, cut into 1" chunks
🫑 1 red bell pepper, seeded & chopped
🧅 1 sweet onion, chopped
🧄 4-6 garlic cloves, minced
🌿 4 cups spinach, roughly chopped
Instructions:
1️⃣ Preheat oven to 425°F. Line two baking sheets.
2️⃣ Mix chickpeas with 2 tbsp oil, paprika, and salt. Let them marinate.
3️⃣ Toss potatoes, bell pepper, onion, and garlic with the remaining 4 tbsp oil.
4️⃣ Spread potato mixture on a baking sheet, sprinkle with sea salt.
5️⃣ Bake for 30 minutes, then add chickpeas and bake for another 10-15 minutes.
6️⃣ Remove from oven, toss in spinach, and mix well.
7️⃣ Serve with mixed greens and sliced avocado. Enjoy!
