Sugar Cookies 🎄
❄Ingredients❄
-1 cup (226 g) unsalted butter softened
- 1 cup (200 g) granulated sugar
- 1 ½ teaspoons vanilla extract (see note)
- 1 large egg
- 2 ½ cups (315 g) all-purpose flour (Plain flour)
- ¾ teaspoon baking powder
- ¾ teaspoon table salt Sugar Cookie Frosting
- 3 cups (375 g) powdered sugar, sifted (weigh before sifting)
-3-4 Tablespoons milk (I use whole milk, but any kind will work)
-2 Tablespoons light corn syrup (see note)
- ½ teaspoon vanilla extract
-Gel food coloring optional
-Additional candies and sprinkles for decorating (optional)
❄Instructions❄
Combine butter and sugar in the bowl of a stand mixer (or in a large bowl and use an electric hand mixer) and beat until creamy and well-combined. Add egg and vanilla extract and beat until completely combined. In a separate, medium-sized bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients in the mixer bowl, mixing on low speed until just combined. Do not overmix. The dough should be soft but not sticky.
Turn the dough out onto a lightly floured surface, divide it in half, flatten each half into a disk, wrap tightly in plastic wrap, and refrigerate for at least 1 hour (or up to 3 days). This chilling step is crucial for easier handling and to prevent spreading during baking.
To Prepare the Cookies:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
On a lightly floured surface, roll out one disk of chilled dough to about ¼-inch thickness.
Use cookie cutters to cut out shapes.
Carefully transfer the cut cookies to the prepared baking sheets, leaving about 1-2 inches between them.
Bake for 8-12 minutes, or until the edges are lightly golden. Baking time will vary depending on the size and thickness of your cookies.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
To Prepare the Sugar Cookie Frosting:
In a medium bowl, whisk together the sifted powdered sugar, milk, light corn syrup, and vanilla extract until smooth and of desired consistency. Add more milk, one teaspoon at a time, if the frosting is too thick, or more powdered sugar if it is too thin.
If using, divide the frosting into separate bowls and tint with gel food coloring.
Once the cookies are completely cool, decorate them with the frosting and any additional candies or sprinkles. Allow the frosting to set before storing the cookies in an airtight container.
