My sweet Lavender 🤍

2 years of you, and somehow you’ve become my best little friend. You are SO funny, so sweet, and you keep us laughing every single day. You have the biggest personality and I honestly don’t know what I’d do without you.

Your current favorite snacks are edamame, seaweed (I know… weird 😂), Cheetos, and lately, Cheerios. You’re obsessed with Bluey, Max and Ruby, and your newest favorite, Blues Clues ! That was my fav too.

You love swimming, dancing, and doing pretty much anything that involves moving your little body. You’re also the sweetest big sister and I love watching you love on your baby sister.

You still absolutely hate sleep 😂 but honestly, we’ll let that one slide.

Being your mom is my favourite thing, but getting to be your best friend is something I’ll never take for granted. I love you more than you’ll ever know, Booshy (her nickname) ✨

lentils are the most underrated food. Most people don’t eat them nearly enough. We try to eat them as often as possible.

Recipe below

Lentil curry

Ingredients

* 1 tbsp oil or butter
* 1 small onion, diced
* 3 cloves garlic, minced
* 1 tbsp grated ginger or 1/4 tsp ground ginger
* 2 tbsp curry powder
* 1 tsp cumin
* 1 cup red lentils, rinsed
* 1 can (400 mL) coconut milk
* 2 cups broth or water
* 1 tsp salt, plus more to taste
* Juice of ½ lime or lemon (optional)
* Fresh cilantro for serving (optional)
* 1 large carrot shredded (optional)

Instructions

1. Turn Instant Pot to Sauté.
2. Add oil, onion and grated carrot and cook 3 to 4 minutes until softened.
3. Add garlic, ginger, curry powder, and cumin. Cook 30 seconds.
4. Stir in lentils, water or broth, coconut milk, and salt.
5. Cancel Sauté.
6. Seal lid and cook on High Pressure for 8 minutes.
7. Let pressure release naturally for 10 minutes, then quick release the rest.
8. Stir well. The curry will thicken as it sits. Add a splash of water if needed.
9. Stir in lime juice and adjust salt.

Salt to taste (i prefer to add a lot of salt)

Serve with a side Greek yogurt or sour cream.
