Maple-Sweetened Pumpkin Muffins
Ingredients:
1/3 cup melted coconut oil
1/2 cup maple syrup
2 eggs, at room temperature
1 cup pumpkin purée
1/4 cup milk of choice
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon cinnamon, plus more for sprinkling on top
1/2 teaspoon ground ginger
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1 and 3/4 cups whole wheat flour
1/3 cup old-fashioned oats, plus more for sprinkling on top
Directions:
Preheat oven to 325°F (165°C) and grease or line a muffin tin for 12 muffins.
In a large bowl, whisk together the melted coconut oil and maple syrup. Beat in the eggs, then add the pumpkin purée, milk, baking soda, vanilla extract, salt, cinnamon, ginger, nutmeg, and allspice, whisking until smooth.
Add the flour and oats to the bowl and mix with a spoon, just until combined. Divide the batter evenly among the 12 muffin cups, topping each with a sprinkle of oats and cinnamon.
Bake for 23 to 25 minutes, or until a toothpick inserted into a muffin comes out clean.
Let the muffins cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
