Today is a great day to bake these delicious Buttery Gingersnaps! The recipe came from a dear friend, Aprile A., many years ago when my children were little. Note! Don't overbake so they remain soft, foldable and chewy!
1 1/2 c Butter
2 c of sugar
2 eggs
1/2 c molasses
4 c flour
4 tsp soda
2 tsp cinnamon
1 tsp each of cinnamon, ginger and cloves
1 tsp. Salt
Preheat oven to 375. Cream butter and sugar. Add eggs one at a time, beating well after each addition. Add molasses. Combine flour, soda, and spices. Roll into balls and roll in sugar. Bake at 375 for SIX minutes. Resist temptation to bake longer. Let them sit on cookie sheet for a few minutes to continue cooking.
