🍭 HOW TO MAKE TAMARIND ICE-BLOCKS

INGREDIENTS:
• 250g tamarind/musika pulp
• 2 litres clean water
• 400–500g sugar
• 1 teaspoon vanilla essence (optional)
• Ice-block plastic sleeves

PROCESS:

1. Break the tamarind into small pieces and place it in a clean bowl.

2. Add about 500ml of warm water and soak for 20–30 minutes until the tamarind becomes soft.

3. Using clean hands, squeeze and mash the tamarind thoroughly to release the juice and pulp.

4. Add the remaining 1.5 litres of water and mix well.

5. Strain the mixture through a clean sieve or clean cloth to remove the seeds and fibres.

6. Add 400g of sugar and stir until completely dissolved. Taste and add more sugar if necessary.

7. Add 1 teaspoon of vanilla essence if you want extra flavour.

8. Pour the tamarind juice into ice-block sleeves using a clean funnel or jug.

9. Tie the sleeves tightly, leaving a little space at the top.

10. Place them in the freezer and freeze until completely solid.

🍭 SELLING TIP:
Make the tamarind flavour strong enough to give that delicious sweet-and-sour taste. Test one ice-block before freezing the whole batch.
