Kutsinta Recipe❤️
My Favorite Kakanin 😋
Ingredients :
Make 22 pcs kutsinta :
1/2 cup all purpose flour
1/2 cup tapioca powder or cornstarch
12 Tbsp sugar
1 1/2 cup warm water
1 tsp lye water
1 teaspoon Pandan flavor
1 teaspoon asuete powder, dissolve in 1tbsp hot water
1 tsp ube flavor
Grated coconut or cheese for toppings

🤔 Combine and whisk all purpose flour, tapioca powder, sugar and warm water.
🤔 Add lye water and pandan flavor and whisk again
🤔 Divide the batter into 2. Then put the ube flavor or asuete. Whisk well.
🤔 Sifted to remove lumbs and bubbles. Salain po para mawala Ang bola.
🤔 Brushed kutsinta molder with oil. Put the batter and steamed 15-20minutes. Garnish With grated coconut or cheese. Serve and enjoy!

3 large eggs
150g soften or melted butter

225g cake flour

Skinless Longganisa ❤️
Ingredients:
1 pound lean ground pork
1/2 cup brown sugar
2 tablespoons vinegar
5 big cloves garlic - chopped finely
1 teaspoon ground black pepper
4 teaspoons annatto/achuete powder
1 tablespoon salt
1 tablespoon flour

Procedures:
In a large bowl, combine all ingredients and mix until well blended. I usually use my hands.
Cover the bowl and let it rest for at least 30 minutes before wrapping.
Cut pieces of wax or parchment paper in 12x12cm sizes.
Spoon a spoonful of the meat into a wrapper and spread along one side forming a log, approximately 8-10cm long and 2cm thick. Roll and wrap then fold both ends to close and seal.

Place the Longganisas in a plastic bag or box and store in the fridge at least overnight before cooking. It can be in the fridge for several days or store in the freezer if planning to store longer.
To cook, remove wax paper and fry in 3-4 Tablespoon oil over medium heat, turning a few times until all sides are browned and cooked through.

Cassava Suman Recipe (Suman Balanghoy ❤️)
Ingredients:
2 pounds grated cassava (about 3 cups) fresh or thawed, if frozen;
½ cup coconut milk
¾ cup brown sugar see note
1 cup shredded buko or young coconut optional;
pinch of salt
Banana leaves (20 6x8-inch pieces)

Procedures:
Rinse or wipe the banana leaves, remove the central rib, and then pass them over an open flame to make them pliable. Cut them into rectangles (about 6x8 inches).
If using fresh cassava, peel and finely grate it. For frozen cassava, make sure it's completely thawed.

Place the grated cassava in a strainer over a bowl or sink. Press it down with a spoon or your hands to squeeze out the juice. Keep pressing until you've gotten most of the juice out, then discard the juice away.

In a large bowl, combine the grated cassava, coconut milk, young coconut (if using), sugar, and a pinch of salt. Mix thoroughly until combined.

Lay a piece of banana leaf on a flat surface horizontally. Place about 3 tablespoons of the cassava mixture on the lower part of the leaf. Shape it into a log about 4 inches long.

Fold the bottom edge of the leaf over the mixture first, then continue rolling it to form a somewhat flat, elongated shape around the cassava. Make sure it's snug but not overly tight.

Fold the sides under the package to seal in the mixture and give the suman its traditional log-like shape. They are ready for steaming at this point, or you can tie them in pairs using a strip of banana leaf, with the flaps facing each other.

Prepare your steamer by filling it with water and bringing it to a boil. Arrange the wrapped suman in the steamer basket.

Cover and steam over medium heat for about 45 minutes, or until the cassava is thoroughly cooked and has a firm texture. As you steam, check periodically and add more water as needed.

Once done, remove the suman from the steamer and let them cool a bit. They can be served warm or at room temperature. For a complete experience, pair it with a warm cup of coffee or hot chocolate!

Bibingkang Latik❤️
Ingredients:
2 cups glutinous rice - washed and drained
1 cup canned coconut milk
1 cup water
2 pieces pandan leaves

LATIK SYRUP
2 cups canned coconut milk
1 cup dark brown sugar
1 teaspoon vanilla (optional)
vegetable or coconut oil - for greasing the pan

Procedures:
1. Generously grease an 8x8-inch square baking pan and set aside.
In a large pot over medium heat, mix together the 1 cup coconut milk and 1cup water. Add the glutinous rice and pandan leaves. Bring to a simmer then turn heat to low and cover. Let it cook until all liquids are absorbed. The rice should only be almost cooked at this point.
2. While waiting, prepare the latik syrup by combining the 2 cups coconut milk and 1 cup dark brown sugar on a large pan or pot. Cook over medium heat while constantly stirring until the liquid thickens into a camarel.
3. Scoop and reserve ½ cup of the latik syrup for the topping later. Add the cooked rice without the pandan leaves to tha pan with the remaining latik syrup. Gently fold the sticky rice and the syrup until completely coated. Cook while stirring from time to time until the rice completely absorbs the syrup and the rice is fully cooked.
4. Transfer the rice into the greased pan and spread out evenly. Pour the reserved latik syrup on spread evenly on top of the rice. Bake in a preheated oven at 350°F/180°C for 20-30 minutes or until the latik is reduced and becomes bubbly.
5. Remove from oven and let it cool down. Cut into squares and serve.
