Mettbrötchen is a traditional German sandwich (or open-faced snack) made from a fresh Brötchen (crusty German bread roll) topped with Mett—finely minced raw pork seasoned mainly with salt and black pepper—and typically garnished with slices or diced raw onions.
The meat must be specially prepared and very fresh (ground the same day, often labeled for raw consumption, with strict hygiene rules and a legal fat limit of no more than 35%) to be safe to eat raw.
