Chris’s Fruit Scone Recipe 👨🏻‍🍳☘️

This recipe is converted from grams so these are rough US cup measures

Chris’s Fruit Scone Recipe

500g | 4 cups of Plain Flour
30g | 3 heaped tsp of Baking Powder
Pinch of Salt
80g | 1/3 Cup of Sugar
100g | 1/2 Cup of Butter
2 Eggs
200ml | 1 Cup of Buttermilk (approx)
150g | 1 cup of Raisins

If you have an issue with the flavor you can also use organic aluminum free baking powder and bake right away once shaped. If you can’t find that you can reduce the baking powder to 20g or substitute with self raising flour.

Add a drop more buttermilk if needed as some flours absorb and hydrate differently

Eggwash - 1 egg yolk mixed with a pinch of salt and sugar

Baking powder already contains an acid unlike bicarbonate of soda. So you can use either regular or buttermilk. For flavor purposes I would suggest buttermilk though

I find that buttermilk also makes them soft and fluffier.

For a buttermilk substitute add 1.5 tbsp of vinegar or lemon juice to some full milk or milk of your choice. Stir and let it stand for about 10 minutes before adding it to the dry ingredients. You can also use some natural or Greek yoghurt thinned out with a drop of regular milk

Bake at 200 C / 390F for 18 minutes (conventional oven)

Fan - 180 C / 355F

What we’re all about!

Sweet Cakes O’ Mine is a little home baking venture I began with the other half a few years ago here in Denmark where we specialise in occasion cakes for the Danes. In March 2020 I was feeling a little down in the dumps and I was missing home so I did a little video to try and reach out to my fellow Dubliners so we could try and cheer eachother up a bit during these harsh times. I was blown away by the response I got so I began to make more videos and it quickly evovled into something deadly and “Up The Dubs” was born. Every week it continues to grow and evolve and I’m looking at it now as a little community where we can all come together, share recipes and have the craic. People are baking my recipes in the Up The Dubs Recipe Album and they are even sending me their own which I then post on the page. Irish celebs have also gotten onboard and our numbers and followers are growing by the day. Who is Maggie??? Maggie is a woman who said good morning to us everyday since the beginning of this. So I thought, instead of me forgetting to write good morning back I would make a point of it instead and include it in all our posts! I’ve promised to post my rolling pin over to Margaret but now I’m thinking...let’s see how this evolves...maybe...just maybe something cool could happen and I can fly over to Dublin with my family (my kids have never even been to Ireland) and I can hand that rolling pin to Maggie instead :) So yes, like I said we are evolving. The youtube channel is up now and the instagram. Now I’m thinking, why does it have to stop in Ireland? I mean, us Irish are all over the world. Let’s reach out to them too! And you don’t have to be Irish. Everyone is welcome here. Now I’ve started to introduce savory dishes in the videos. So if you would like to share something with us from your culture/country please feel free to do so and I’ll put it up! It needs to be good now...don’t be sending me pictures of beans on toast or something d’ye know what I mean...So yeah everyone is welcome. Like I say in the youtube intro video...You don’t have to be Irish to be Irish! (Knicked from Darby O Gill) Yeah, I didn’t come up with that little gem meself.
