STRAWBERRY MUFFINS
INGREDIENTS (12 Muffins)
1 3/4 cups all-purpose flour, sifted (210 g)
1/2 cup sugar (100 g)
1 tsp baking powder
1/2 baking soda
1/2 tsp salt
1 cup plain or greek yogurt (250 g)
1/3 cup vegetable oil or melted butter (80 ml)
1 large egg
1 tsp vanilla extract
1 cup diced strawberries + 1/2 cup for toppings
INSTRUCTIONS
- Preheat oven to 170 C. Line 12 muffin tins with paper liners.
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a large bowl, beat the yogurt, oil, egg and vanilla extract. Add the flour mixture, mix to combine. Add the strawberries, gently fold in the batter. Don't over mix.
- Divide batter into 12 muffin cups. Top with more strawberries.
- Bake for 15-18 minutes or until a toothpick inserted in the middle comes out with just a few moist crumbs.
- Let it cool in the pan for 5 minutes then transfer to a wire rack to cool completely.
