Potato Pide

Ingredients

My measuring cup is 200 ml.
I used a double batch of this recipe 🙌🏻; if you have a large family, you should double the measurements too 🧑🏻‍🍳👩🏻‍🍳

My measuring cup is 200 ml.

For the dough:

250 g flour (2 cups)
100 ml warm milk (a little over half a cup)
1 egg
8 g salt (1 dessert spoon, but not heaping full)
30 g room-temperature butter
15 g granulated sugar (1 level tablespoon)
4 g dry yeast (2 teaspoons)

Filling:

2 medium-sized boiled, mashed potatoes
1 tablespoon butter (add while the potatoes are hot)
Black pepper, salt, red pepper flakes

Mix and mash everything together.

Preparation:

Place the flour in a mixing bowl and make a well in the center; add the yeast and warm milk, and let the yeast activate for about 5 minutes. Then, add the egg and salt and knead the dough. Once the dough comes together, add the butter and knead again; the dough will be soft—that is how it is supposed to be. The consistency and flavor of the dough may vary depending on the quality of the flour! (I tried this recipe at a relative's house during the holiday, and the recipe went wrong because of the flour 🥲—yes, flour really is that important 🥲). Lightly flour your work surface, gather the dough, and form it into a ball. Lightly flour it again and roll it out (not too thin), add the potato mixture and about 100 g of grated kashar cheese, seal it as shown in the video, flip it over, lightly flour it again, and enlarge it with a rolling pin. Place it on a baking tray, cover it, and let it proof. After proofing, brush with beaten egg... Shape it, sprinkle nigella seeds, poppy seeds, and sesame seeds on top, and place it in an oven preheated to 180°C. Bake until golden brown. Once it's done, mix 1 tablespoon of melted butter with finely chopped parsley and brush the mixture over the bread while it's still hot. Serve with a tomato salad and some tea—absolutely delicious! 😋 Enjoy! I'm off now; hope to see you again soon! 🙋🏻‍♀️🤗

Triangular Gözleme

Ingredients

500 g flour (4 cups)
360 ml warm water (1 cup + slightly less than 1 cup)
10 g salt (1 dessert spoon)
1 teaspoon dry yeast

Ensure the water is warm; combine all ingredients to form a medium-firm dough (the consistency may vary depending on the flour quality; if it's too soft, add a little more flour; if too stiff, add a little water to bring it together). Divide the dough into 4 equal pieces and let them rest for about 10–15 minutes.

Fillings

For the eggplant filling

2 small eggplants, 1 medium onion, 1 clove of garlic, 1 green pepper; sauté everything in oil. Finally, add about 1/2 cup of tomato sauce; add salt and black pepper at the very end.

For the potato filling

2 medium boiled potatoes, 5 tablespoons oil, 1 dessert spoon paprika (powdered red pepper), 1 teaspoon black pepper, and salt; combine and mix everything together.

For the cheese filling

About 100 g white cheese (feta-style), parsley, black pepper

For the sucuk (spicy sausage) filling

150 g grated kashar cheese, 100 g sucuk

Roll out the dough pieces very thinly using a rolling pin and shape them as shown in the video. Cook over medium-low heat, brushing both sides with oil and flipping to cook both faces. Bon appétit! I'm off now! 🙋🏻‍♀️🤗

German Cake

Cup measurement: 200 ml.

For the Dough:

350g flour (2 cups + 1 cup minus one finger, i.e., 3/4 cup)
100 ml lukewarm water (1/2 cup)
65g granulated sugar (1 finger minus half a cup)
75g margarine or butter at room temperature

15g fresh yeast
1 egg
1 teaspoon cinnamon or mahlep (I forgot to add it, don't forget it 🥲)
Instructions:

Combine all ingredients to obtain a soft dough, then divide into 6 balls, approximately 100g each (Please make sure the water is lukewarm, not hot or cold!)
Shape into bagels, place on a baking tray with spaces in between, let them rise at room temperature for exactly 30 minutes, then let them rise for another 10 minutes in a 100°C oven (without fan, top and bottom heat), then increase the temperature to 180°C and bake until golden brown. That's it, done! 😌
Pastry Cream:
600 1 ml milk (3 cups)
150 g powdered sugar (2 fingers less than 1 cup)
75 g cornstarch (3 heaped tablespoons)
20 g flour (2 level tablespoons)
50 ml liquid cream (about half a teacup)
75 g white chocolate
10 g vanilla (1 packet)
Preparation

Put the sugar and 3/4 of the milk in a saucepan and bring to a boil. Whisk the remaining milk with the flour and cornstarch. Add this mixture to the boiling milk through a sieve. Once it thickens, turn off the heat. Add the chocolate and vanilla and stir until the chocolate melts. (I cooled it on my counter. You can cover it with plastic wrap so that it touches the cream and, once cooled, add the cream and whisk with a mixer.)
For the sauce:

75 g margarine or butter

75 g dark chocolate

35 g praline (1 tablespoon breakfast cereal) (Chocolate)
Preparation

Melt the margarine on the stove, turn off the heat, add the chocolates and melt them slightly at room temperature, not too cold or too hot. You can use the remaining sauce inside; just warm it slightly on the stove. It will stay fresh for 15 days without any problems. Assembly: Cut the cooled dough in half with a serrated knife (a regular knife won't work, my dear 🥲). Squeeze the cream onto the top lid and stick it together. Dip the remaining dough in the sauce from there. That's it 🥰 See you later, I'm off now 😘🙋🏻‍♀️

Meat-Filled Simit Pide (Turkish Flatbread)

Ingredients

Water glass measurement: 200 ml.

500 g flour (4 cups)
300 ml lukewarm water (1.5 cups)
40 ml vegetable oil (5 tablespoons)
25 g butter (1 tablespoon)
6 g dry yeast (1 teaspoon)
10 g salt (1 heaping teaspoon)
10 g granulated sugar (1 teaspoon)

For the filling:

500 g minced meat
1 red bell pepper 🌶️
3 green peppers

1 large tomato
1 medium onion (grated, finely chop the others)
Black pepper, red pepper flakes, salt (Combine and knead, the filling is ready!)

For the dough: Put the flour in a mixing bowl, add the dry yeast, granulated sugar and lukewarm water to the middle, let it sit for 5 minutes, then add the vegetable oil and knead the dough. Finally, add the butter and knead again. (The consistency of the dough may vary depending on the quality of your flour; it should be a soft dough.) Cover the dough... Cover and let it rise. After rising, divide the dough into 9 equal parts, roll them into balls, and let them rest for 10 minutes. After that time, shape them as shown in the video. For the molasses water, mix 4 tablespoons of molasses and 1/2 cup of water. Dip the dough first in the molasses water, then in roasted sesame seeds. After shaping, add grated cheese on top. Preheat the oven; it should be fully heated when you're baking. Bake at 200 degrees Celsius (fan-assisted) until the pides are cooked through. (By the way, I'll block anyone who says they're not cooked. Even I can cook at 200 degrees Celsius in half an hour 😂) Anyway, I'm off now. Enjoy! 😋 See you later! 🙋🏻‍♀️🤗

Kafes Tart
For the dough
300 g flour (2 cups + 5 spoons for wiping)
1 egg
100 g powdered sugar (6 tablespoons)
4 g baking powder (1 full teaspoon)
1 tablespoon of hard yogurt
1.5 tablespoons of labne cheese
1 packet of vanilla (5 g)
100 gm cold butter (chopped cubes)
Put the dough ingredients in the kitchen robot shredding and pull it. At first it will be stale and then it will be quickly recovered.
For the inside
Cook 250 g seedless cherries and 6 tablespoons of powdered sugar until the water is absorbed. Let's cool and that's fine. 😌
Now open 4/3 of the dough in a round way and put it on a tray, first put hazelnut cream on it then add cherry sauce, open the rest of the dough to the length when you first open it and shape it with an appliance, cool it carefully on the dough on the tray, lastly, pour an egg yolk and bake in a 170 degree fan oven until it reaches nartanem, enjoy your meal 😋 see you soon I’m gone 🙋🏻 ♀️🤗

Mosaic Pasta 🍫
Ingredients
200 ml water glass
300 g petibör biscuits (1.5 package)
250 ml milk (1.5 water glasses)
25 g cocoa (2.5 tablespoons)
75 g butter
100 g powdered sugar (1/2 water glasses)
For the top
200 ml liquid cream
120 g dark chocolate
Preparation
Put the milk, powdered sugar, and cocoa in a saucepan and cook, then add the butter. Stir until the butter melts, then break the biscuits and add the sauce that is already in place. Mix until the biscuits are crumbled, then add the biscuits and the mixture on the bottom as shown in the video. That's it. Now, add the biscuits on the top and sprinkle the mixture on top. Adjust (close the edges tightly so the ganache doesn't crack down below🤗😀). Then, add the biscuits on the top in the same shape. That's it. Now, it's time for the ganache. Take the cream and sauce to the pan, put it on the stove, and when it reaches the boiling point, cover the bottom. Add the chopped dark chocolate and stir until it melts. The ganache won't be hot, it will be at room temperature. If you add hot water, the biscuits will absorb all the sauce, and the result will be a mess😀🥲. Anyway, add the ganache, put it in the fridge, let it sit for 3-4 hours, and finally slice and serve. I swear, even the most clumsy person can make this recipe 😅. It's both easy and crazy 🤪. For those who will try it, good luck, enjoy your meal. I'm off now 🙋🏻 ♀️🤗
