✨🍠 Burrata & Beet Sweet Potato Stacks 🌰✨
Looking for a dish that’s elegant, colourful, and bursting with flavour? This one’s a total showstopper – roasted sweet potatoes stacked with herby walnut-sage pesto, creamy burrata, and jewel-toned beets. Perfect for parties, dinner boards, or when you just want to treat yourself. 😍

👩‍🍳 Ingredients:

🥔 Sweet Potato Rounds

2 medium sweet potatoes, sliced into ½-inch rounds

2 tbsp olive oil

½ tsp salt

¼ tsp black pepper

🌿 Walnut Sage Pesto

1 cup fresh sage leaves

½ cup fresh parsley

1 garlic clove

⅓ cup toasted walnuts 🌰

¼ cup grated Parmesan 🧀

⅓ cup olive oil

Salt & pepper, to taste

✨ Toppings

1 large ball burrata cheese (or 2 small), torn into chunks

1 cup roasted beets, cut into wedges ❤️

Whole walnut halves 🌰

Fried or fresh sage leaves 🌿

Extra Parmesan 🧀

Drizzle of olive oil (optional)

🔥 Instructions:
1️⃣ Roast sweet potato rounds at 400°F (200°C) with olive oil, salt & pepper → 25–30 mins, flipping halfway.
2️⃣ Make pesto: blend sage, parsley, garlic, walnuts, Parmesan & olive oil until smooth. Season.
3️⃣ Roast beets (if not pre-cooked): 35–40 mins at 400°F in foil with olive oil & salt.
4️⃣ Assemble: spread pesto on each sweet potato round - top with burrata, beet wedge & walnut half.
5️⃣ Garnish with crispy sage, extra Parmesan & drizzle of olive oil. ✨

⏱️ Prep: 25 mins | Cook: 30 mins | Servings: 10–12 rounds | Difficulty: Easy & elegant
