Saffron & Sherry Roast Chicken with Tarragon Butter - very much inspired by Andalusian cuisine 🇪🇸

Saffron Roast Chicken & Potatoes
Ingredients
600g potatoes, peeled and sliced
1 large carrot peeled and sliced
1 x lemon, quartered
2 white onions, sliced
1.5kg whole chicken, room temp
8 cloves garlic, peeled
1 dried chilli or chilli flakes (optional)
250 ml chicken stock
pinch saffron threads, ground
2-3 tbsp sherry vinegar
2 tbsp olive oil
Salt
For the butter:
3 tbsp softened salted butter
4 stalks tarragon leaves, finely chopped
3 cloves garlic, minced
Method
Preheat the oven to 200°C. Spread the sliced potatoes, carrots, onions, garlic, and chilli evenly across a large baking tray. Toss together lightly to combine.
Place the chicken on top of the vegetables. In a small bowl, mix together all the ingredients for the tarragon butter. Gently loosen the skin over the chicken breasts and spread most of the butter underneath the skin, then rub the remaining butter over the legs and wings.
Warm the chicken broth slightly and stir in the saffron. Pour the saffron broth and the sherry around the chicken and over the vegetables. The liquid should come about 1–2 cm up the sides of the tray.
Roast for 30 minutes, then baste the chicken with the cooking juices. Return to the oven and roast for a further 30 minutes, or until the chicken is cooked through and golden. Remove the chicken from the tray and leave to rest.
If needed, return the vegetables to the oven for 10–15 minutes to finish cooking and caramelise on top.
Carve the chicken and serve with the roasted vegetables, plenty of the sauce, and a side salad.

We LOVE a brothy soup around here and when the recipe is as simple as this one you’ve got to be using a chicken broth 🥘 when I’m low on the homemade stuff then the chicken bone broth is my go-to! It’s made with natural ingredients and tastes so good on its own as a drink!

My take on a tomato & egg drop soup

Ingredients
2 tbsp coconut oil
4x spring onions, sliced
1 thumb sized piece ginger, minced
1 tsp turmeric
1 tsp sesame seeds
2 large ripe tomatoes, diced
800ml Chicken Bone Broth
2 eggs, whisked
1 tbsp soy sauce
1-2 tbsp rice vinegar
2 tsp sesame oil

To serve: coriander/ spring onions and chill oil

In a deep saucepan, heat the oil.
When the oil is translucent add the white part of the green onion as well as the ginger and fry until fragrant. Add the tomatoes and a pinch of salt. Stir fry until the juice comes out and the tomatoes soften.
Add chicken bone broth and the potatoes. Bring to a boil.
Let this simmer for a moment.
Add the eggs in a circular motion and then reduce the heat down to low, cook for about 1 - 2 minutes.
Add soy sauce, white pepper, sesame oil and salt
Add the green vegetables and stir. Once the green vegetables are cooked through, remove from the heat and serve.
Garnish with the green onions, coriander and chilli oil if you fancy
Notes: this is a really simple version of the recipe, you could also add potato and greens such as spinach.

One of my proudest achievements of 2025 was being invited to Julia’s family home in Chamonix to discover her Heritage Recipe - her father’s famous Polenta. Claude was an inspiring character and so welcoming and generous with his cooking and hospitality. What an abilities honour it was to share a glimpse of their heritage and home with you guys 🙏
