Wild garlic and Comte cheese soufflé’s. Much easier than you’d think and makes for a delicious light lunch. The wild garlic is subtler than you’d think, if you can’t find any, use a big handful of chives. Gruyère would be delicious too.
Recipe below.

Lots of butter and flour for greasing 60g butter
60g flour
360ml whole milk
150g Comte cheese or Gruyère
1 heaped tsp of Dijon mustard
A handful of chopped wild garlic
4 large eggs
Big old pinch of salt

Very simple. Grease and flour four to five ramekins. Melt the butter, stir in the flour and cook gently for a few mins until thick and biscuity. Whisk in the milk little by little. Then take off the heat. Add the mustard, garlic, cheese and egg yolks + a hit of salt and pepper. Whisk the whites to stiff peaks, then fold through very carefully in thirds. Pour into the ramekins and bake at 200 degrees for about 15-20 mins. Serve with zingy green salad.

I've put together a little video for you showing the process of walking a wild bee swarm we caught into a new hive. Its one of the most remarkable experiences within nature I've ever had. It takes about 2 hours for a swarm this size to walk into a hive and it feels and looks like a flowing river. So beautiful, but quite hard to crop into a minute video. I hope I've captured the essence of it for you. Try and watch this on a bigger screen if you can.

I had the amazing experience of catching a swarm of wild bees yesterday. Watching them walk into the hive up a ramp was one of the most surreal moments of nature I've ever seen. Truly special! I filmed it all on my proper camera and will put together a short film for you all to see soon. More detail in my story for anyone who hasn't seen it yet.
