Being your own boss is demanding. So let’s fuel ourselves right and keep our bodies performing at their best to keep us at our best. Here’s five of the best veg and why:
1. 🍵 Spinach. It’s got vitamin A, K and antioxidants - it’s packed full of good stuff. Mix it in with a bolognese, add it to pizza, blitz it up with some pine nuts, garlic and olive oil to make a pesto sauce, whip it up with your smoothie, or add it in to soup.
2. 🥕 Carrots. With vitamin A, C and potassium, it’s got something for everyone. Carrot chips are super tasty, grate carrots onto a salad, give them the noodle treatment, mash ‘em up, whiz 'em up and add to your pancake batter or cookie dough, or just cut them up and dip in hummus, that’s good too.
3. 🥦 Broccoli. It’s got vitamin A, C, K, folate, manganese, potassium - and beyond. Add it to a stir fry, season and oil it before roasting it whole, hide leftover cooked broccoli in your cheese toastie, whip it up to make a pasta sauce, or whip it up and add it into a chocolate cake mix.
4. 👾 Beetroot. It's packing fibre, folate, manganese and is rich in nitrates. Not bad. Chop it up small and mix it in with salsa, cut into wedges and mix with a bit of olive oil, honey, salt and pepper and roast it, add it into your veggie frittata, toss some in alongside the ‘toads’ in your next toad-in-the-hole.
5. 🫛 Peas. A super nutritious ball of goodness, peas have protein, fibre, vitamin A, C, K, plus lots more to keep you healthy. Mash them up for a tasty side, add them into any pasta sauce, mix them in with mushrooms for an omelette, whiz them up into a puree and add them to a cake batter, fry them with a little garlic and butter - mwah chef’s kiss!
