🧇 Homemade Waffles Recipe

Ingredients (makes 4–6 waffles):

2 cups all-purpose flour

2 tbsp sugar

1 tbsp baking powder

1/2 tsp salt

2 large eggs

1 3/4 cups milk

1/2 cup melted butter (or vegetable oil)

1 tsp vanilla extract

Instructions:

Preheat your waffle iron according to the manufacturer’s instructions.

Mix dry ingredients: In a large bowl, combine flour, sugar, baking powder, and salt.

Mix wet ingredients: In another bowl, whisk together eggs, milk, melted butter, and vanilla.

Combine: Pour wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.

Cook: Spray waffle iron with non-stick spray or brush with oil. Pour batter onto the waffle iron (amount depends on your iron) and cook until golden brown.

Serve warm: Top with your favourite toppings – maple syrup, fresh fruit, chocolate sauce, or whipped cream.

Tips for Perfect Waffles:

Preheat your waffle iron fully before adding batter.

Don’t overfill the waffle iron, or batter may spill.

For extra crispy waffles, leave them in the iron a little longer.

*Ingredients:*

For the dough:

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup cold butter or margarine
- 1/4 cup ice-cold water

For the filling:

- 1 pound ground beef (or a mix of beef and potatoes)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon curry powder
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 hard-boiled eggs, diced (optional)

*Instructions:*

1. *Make the dough:* Combine flour and salt in a bowl. Add cold butter and use your fingers or a pastry blender to work it into the flour until the mixture resembles coarse crumbs. Gradually add ice-cold water, mixing until a dough forms. Knead lightly, wrap in plastic, and refrigerate for 30 minutes.
2. *Prepare the filling:* Cook the ground beef in a pan until browned, breaking it up into small pieces. Add diced onion, garlic, curry powder, thyme, salt, and pepper. Stir well and cook until the onion is translucent.
3. *Assemble the pies:* Divide the chilled dough into 6-8 portions. Roll out each portion into a thin circle. Place a spoonful of the meat filling in the center of each circle. Add diced hard-boiled eggs if using.
4. *Fold and seal:* Fold the dough over the filling to form a triangle or a square shape, and press the edges to seal. Use a fork to crimp the edges.
5. *Bake or fry:* You can either bake the pies in a preheated oven at 375°F (190°C) for 20-25 minutes or fry them in hot oil until golden brown.
6. *Serve:* Enjoy your Nigerian Meat Pies hot or cold, as a snack or with a side dish.
