The first time I made Dubai Chocolate – this dessert has been all over social media for the past few months.

At first glance, it looks like it might be too rich, but oh my, once you take a bite, it’s insanely addictive! The combination of slightly bitter chocolate and the rich, nutty aroma of pistachios – all without being overly sweet – creates a perfectly balanced treat you just can’t get enough of.

If you’re a hardcore fan of chocolate and pistachio like I am… honestly, don’t even try it, because once you do, you’re going to get hooked. And once you’re hooked, there’s no turning back!

I made the pistachio paste myself at home, using 100% real pistachios – roasted and ground by hand – so it’s super creamy and nutty, with a deep, irresistible flavor.

Every batch I make, my daughter swoops in and devours it all. Luckily, I managed to save a few pieces just for photos!

Feeling so proud of myself for the first time enter a cake competition and won a GOLD MEDAL at the 2025 Britain’s Best Cake.

The cake was judged by its design, structure and taste.

This year, Thy Rose Cake entered the competition with a cake named “The Pure Delight”. A cake was an almond cake made with ground almond and cake flour, filling with white chocolate fresh cream cheese with fresh raspberries for a balance of taste. And added roasted almond flake is such a complimentary element to enhance the flavour.

The cake was covered with my signature buttercream, my own recipe to creat a fluffy soft and smooth which melted in the mouth such as Vanilla ice cream.

Thankful to the event organiser for such a great competition.
