As much as I love creating desserts, I adore capturing them too. But sometimes, time slips away… These tarts, crafted back in December, never made it to the spotlight—until now. Each one a little story waiting to be told:
1. Dark chocolate ganache, crunchy insert, coffee ganache
2. Caramel chocolate ganache, coffee ganache
3. Pistachio cream, cranberry insert, pistachio bavarois
They deserved their moment. And maybe a few more photos too. 😉✨️

Ganache magic in the making 🍫✨
This time I’m showing you how I covered in ganache a cake—using my trusty IKEA spatula and L-shaped scraper. 🙂
I always start with a thin coat, chill it, then go in for that silky-smooth finish. Stick around till the end to see how I decorated it! 🎂💫

This time, I'm showing you how I assembled a cake with mango and chocolate cream. I put this cake together without using piping bags; I simply weighed the cream and leveled it with a spatula. I usually soak the cake layers using a silicone spatula, moistening each slice of sponge on both sides—in this case, the sponge will be 100% soaked. Fluffy sponge cakes tend to be less crumbly if they've rested in the fridge for at least one night to stabilize. In this case, I had a sponge that had only been baked a few hours earlier—it was very fluffy but also very delicate.
