Chicken and Broccoli Stir Fry
When Monday comes around, we need meals like this to come together in just 30 minutes. Am I right?
1.5 lbs chicken breast, cubed
4 cups Broccoli florets
1 onion, sliced
4-6oz mushrooms, sliced
2 garlic cloves, minced
Pinch of black pepper
Toasted sesame seeds
Sauce:
1 and 1/4 cup chicken broth, or veggie or water
1/4 cup soy sauce
1 tbs sesame oil
1 garlic clove, minced
2 tbs brown sugar or honey
1 tbs corn starch
Mix everything for the sauce in a bowl. Set aside. In a large pan, heat some oil and add cubed chicken. Season with black pepper. Allow to brown on one side before mixing. When completely browned, remove from the pan and set aside. Add more oil to the pan and add your broccoli, mushrooms, onions and garlic. Mix constantly for 5 min or until broccoli is tender. Add chicken back to the pan. Give your sauce another mix to make sure it hasn’t settled and pour into the pan. Mix everything to fully coat in the sauce. Lower heat to a simmer and gently mix. Allow sauce to thicken. Add 1 tsp of toasted sesame seeds and mix. Serve with cooked rice and garnish with more sesame seeds.
