Night 5 (and the final night) of my £30 Dinner Challenge ✨

This one was all about using up what we already had left from the week so & we’re finishing things off with Egg Roll in a Bowl with Rice 🍚🥬

RECIPE ⬇️⬇️

• 500g pork mince
• ¼ white cabbage, finely sliced
• 1/2 onion, sliced
• 2 carrots, grated
• 3 cloves garlic, minced
• 4 tbsp soy sauce
• 1 tbsp sesame oil (optional)
• 2 cups dry rice

Method
1. Cook rice
2. Brown pork mince in a large pan.
3. Add onion and cook for 3–4 minutes.
4. Stir in garlic and carrots.
5. Add cabbage and cook until softened.
6. Stir through soy sauce and sesame oil.
7. Cook for a further 3–4 minutes.
8. Serve over rice

Night 4 of my £30 Dinner Challenge ✨✨

Tonight we’re having Cowboy Pie 🥔🧀

And it isn’t exactly revolutionary, but I think we sometimes forget about the simple meals.

RECIPE ⬇️⬇️

• 8 sausages
• 2 tins baked beans
• 600/700g potatoes, sliced
• as much cheddar cheese as your heart desires xoxo
• Salt & pepper

Method

1. Grill the sausages until cooked through and slice.
2. Parboil the potatoes for 5–7 minutes.
3. Mix sausages and beans in an oven dish.
4. Layer over the potatoes.
5. Top with cheese.
6. Bake at 190°C for 25–30 minutes until golden.

Night 3 of my £30 Dinner Challenge 🍝

Food prices might not be what they used to be, but I wanted to see if affordable family dinners were still possible.

Tonight we’re having a Creamy Cajun Chicken Pasta Bake with Tortilla Garlic Bread 🌶️🧄🧀

RECIPE ⬇️⬇️

• 500g pasta
• 400g chicken breast, diced
• 1 red pepper, diced
• 1 onion, diced
• 1 tbsp tomato purée
• 300ml double cream
• 250ml chicken stock (I did 100ml think needed a bit more)
• 150g cheddar cheese

Seasoning
• 2 tsp smoked paprika
• 1 tsp garlic granules
• 1 tsp oregano
• ½ tsp chilli powder (optional)
• salt + pepper

Method

1. Cook pasta until just underdone.
2. Fry chicken until golden.
3. Add onion and pepper and cook for 5 minutes.
4. Stir in seasoning and tomato purée.
5. Add stock and simmer for 2 minutes.
6. Stir in cream and half the cheese.
7. Mix through pasta.
9. Top with remaining cheese.
10. Bake at 180°C fan for 20 minutes.

Tortilla Garlic Bread
• 2 tortillas
• butter
• garlic or granules
• cheddar cheese

Mix butter and garlic, spread onto tortillas, sprinkle with cheese and into the oven until crispy (ish lol).

So far so good and we are over half way?! Stay tuned for the rest of the week ✨
