This August, one of Scotland’s most exciting culinary talents is bringing an unmissable dining experience to the heart of the Edinburgh Fringe Festival.

Acclaimed chef Modou Diagne will bring his dining concept to Scotland’s capital as a limited-run pop-up restaurant from August 7th - 24th only, offering a bold, immersive tasting menu that redefines food boundaries. There is no set menu. Instead, diners will be treated to a dynamic, ever-changing tasting experience shaped entirely by Modou and his team, celebrating seasonality, bold flavours, and the power of storytelling through food.

Helmed by Senegalese-born Chef Modou Diagne, the visionary behind Glasgow’s much-loved 111 by Modou and newly opened Trust by Modou, the pop-up Edinburgh restaurant invites guests to surrender control and embrace the unexpected. With no menu and no choices, diners are asked to place their full trust in the chef – and in return, receive an ever-changing, multi-course journey through Modou’s creativity, culture, and passion.

This summer, turns up the heat with the launch of its brand-new Summer Terrace in partnership with V***e Clicquot. Bursting with tropical colour and energy, this vibrant rooftop retreat brings an unexpected splash of sunshine to the heart of Edinburgh.

Located on the 4th floor of St James Quarter and framed by panoramic views of Edinburgh’s historic skyline, the terrace is a summer oasis. Towering palms, vivid orchids, and cascades of tropical flora in hot pinks and fiery oranges set the scene, while playful directional signage and sunshine-yellow bistro tables, dressed with signature V***e Clicquot blankets, lend a whimsical, Instagram-ready charm. It’s a garden in the sky - bright, inviting, and made for summer.

The Terrace has its own cocktail menu, featuring exclusive Champagne and Belvedere Vodka creations. Highlights include La Vie En Rosé, a delightful blend of Lillet Blanc, raspberry syrup, and V***e Clicquot Brut Rosé; Heatwave, a sultry short drink featuring Belvedere Vodka, passionfruit purée, Campari, Ancho Reyes chili liqueur, and honey; and Endless Summer, a bright and aromatic mix of Bombay Sapphire gin, peach and Earl Grey syrup, lemon, and Angostura bitters, topped with V***e Clicquot Brut Yellow Label.

Critically acclaimed chef Modou Diagne, renowned for his innovative approach and the celebrated success of 111 by Nico, has opened his second Glasgow restaurant.

This new restaurant, aptly named , has opened in the vibrant Finnieston strip. Diners are encouraged to surrender their expectations and place their full trust in the chef’s culinary vision. TRUST signifies a confident evolution in Modou’s culinary journey, embodying a concept deeply rooted in creativity, spontaneity, and a strong connection between the kitchen and its guests.

There is no set menu. Instead, diners will be treated to a dynamic, ever-changing tasting experience shaped entirely by Modou and his team, celebrating seasonality, bold flavours, and the power of storytelling through food. The 5 course menu is priced at £30pp with curated drinks pairings priced at £28pp. Trust’s menu is likely to change every couple of days and no two menus are ever the same.

Chef Modou Diagne said;

“TRUST is designed to be about more than just exceptional food; it’s fundamentally about fostering connection, delivering delightful surprises, and giving our guests a compelling reason to return. We aim for them to come back not merely for a specific dish, but for the unique feeling and experience we provide. With stunning views spanning from Arthur’s Seat and the historic Old Town to the Firth of Forth, the dynamic new day-to-night restaurant with terrace is set to become a must-see destination for both locals and visitors.

Whether it’s a peaceful morning coffee after a walk, a hearty breakfast with a view, a healthy takeaway option on the go, or catching up with friends over small plates and a glass of wine as the sun sets - the 35 cover Cafe Calton offers something for every moment of the day. The carefully curated menu includes classic Scottish flavours alongside fresh, wholesome dishes to suit all tastes, including those leading an active lifestyle. A takeaway menu is also available for visitors to unwind on the iconic hill.

Dishes on the menu include a Haggis Toastie, Scottish Smoked Salmon on buttered crumpets, Benedicts - Ham, Salmon or Spinach, Avocado & Sourdough and a Full Scottish Breakfast. Healthy options for breakfast and brunch include a Raspberry & Matcha Chia Pudding, Homemade Hazelnut Granola and Gluten Free Porridge. Critically acclaimed chef Modou Diagne, known for his innovative approach and celebrated success at is set to open his second Glasgow restaurant this summer.

Duck & Waffle Edinburgh Unveils New Seafood Set Menu to Celebrate St James Quarter Seafood Festival 2025

has launched an exciting new Seafood menu in celebration of the Seafood Festival 2025.

From Thursday May 1st guests at the celebrated restaurant are invited to dive into a culinary adventure featuring the freshest seafood offerings that highlight both traditional and contemporary flavours inspired by the rich maritime heritage of Scotland.

The new two of three course set menu coincides with the St James Quarter Seafood Festival, which takes place this weekend and celebrates Scotland’s abundant coastline and excellent seafood sector.

In honour of the festival, Duck & Waffle Edinburgh’s Executive Chef Jonathon Bowers has created a unique Seafood meal set menu that will tantalise taste buds and highlight the best seasonal catches from local suppliers. Alongside this, the restaurant has introduced a new Oyster Hour every Sunday - Friday from 4pm - 7pm in the bar and terrace where guests can indulge in oyster specials, paired with a refreshing cocktail or glass of wine.

Lychee Oriental, Glasgow’s modern Cantonese restaurant, will launch its second location in the city’s Southside tomorrow.

Celebrity Chef and TikTok phenomenon, Chef Jimmy Lee, will expand the brand and introduce a second restaurant site to Glasgow’s when he opens Lychee Oriental Southside on Kilmarnock Road in the trendy Shawlands neighbourhood.

With a successful Lychee Oriental in Glasgow City Centre since 2015, the new Glasgow Southside site will open its doors on Wednesday April 30th and aims to take diners on a delicious journey through modern Asian cuisine, blending traditional flavours with innovative Cantonese culinary techniques.

In a vibrant and stylish setting, Lychee Oriental showcases Chef Jimmy Lee’s passion for creating exceptional Cantonese dishes using only the freshest, locally sourced ingredients.
