We only serve the best ingredients on our menu unfortunately since the demise of The Emsworth Oyster Company we have had to look a little further afield for our Oysters.

Maldon Oysters have been cultivated on the Essex coast since long before the advent of agriculture. On the beds in the brackish, marshy waters of the Blackwater Estuary oysters have been harvested since Roman times. As one of the UK’s largest producers of Oysters, maldons family-run business and its small team continue this tradition.

Like farmers and fishermen combined, they obsess over the timeless oystermans’ art of nurturing, hand-picking and hand-grading oysters. However, this natural and sustainable approach is married with an unrivalled, state-of-the-art oyster depuration process. Using the latest techniques science can offer they produce some of the UK’s finest oysters.

The majority of the oysters grown on the beds in Essex are Rock Oysters (Gigas). This oyster is known for its deep cupped shell and smooth and meaty texture. They are often described as having a rich but not overbearing flavour with a sweet aftertaste, a light aroma of the sea.

We are delighted to be using Maldon Oysters at our Oystercatcher - Shuck & Sip event This Saturday 29th of June 10am - 4pm

These oyster are perfectly matched with sauces and The light, dry notes of .official complements the oysters’ briny freshness perfectly.
