This vibrant beetroot hummus is a simple way to add more fibre, plant diversity and colour to your meals. Made with chickpeas, beetroot, tahini and lemon, it’s perfect for dipping, spreading onto toast or adding to lunch bowls.
Beetroot & Chickpea Hummus 🩷

Ingredients
Serves 6
1 jar Bold Bean Co. Queen Chickpeas, drained
250g cooked beetroot
3 tbsp tahini
Juice of 1 lemon
2 garlic cloves
1 tsp ground cumin
4 tbsp extra virgin olive oil
Salt and black pepper, to taste
To Serve
Extra virgin olive oil
Chopped parsley
Toasted pistachios
Crudités, crackers or toasted sourdough
Method
Add the chickpeas, beetroot, tahini, lemon juice, garlic, cumin, olive oil, salt and pepper to a food processor.
Blend until smooth, adding a splash of water or reserved chickpea liquid if needed to loosen.
Taste and adjust the seasoning, adding extra lemon juice if preferred.
Transfer to a serving bowl and swirl the top with the back of a spoon.
Finish with a drizzle of extra virgin olive oil, parsley and toasted pistachios before serving.
