From riverside dining in London to authentic Japanese minimalism and Dublin’s cocktail culture, three recent projects are showing how food & beverage interiors are evolving, and it’s not just about what’s on the menu.

✨ At Vicinity Restaurant, Furniture Fusion teamed up with designer Abi Perry-Jones to create custom furniture that makes the most of those Tower Bridge views.

✨ The Sushi Co, designed by Design Command, draws on kintsugi philosophy and Japanese craft to offer a slower, more intentional dining experience, right down to bespoke wall coverings and zen-inspired materials.

Gensler has transformed a former department store into NEXT’s largest store yet, a bold, 80,000 sq ft flagship at Lakeside Shopping Centre. This is a store relaunch and a whole new direction for the brand!

➡️ With two dramatic atriums, light-flooded spaces, and a flowing layout, the design invites visitors to explore and stay longer.
➡️ A new material palette, from soft metallics to timber tones, reflects NEXT’s evolution with subtle transitions between departments.
➡️ It’s a smart reuse of space too, reinvigorating a key arrival point at the east end of the centre and adding a sense of completeness to the retail journey.

Balsan are helping to shape the future of commercial interiors by investing in the next generation of talent.

Their Dare Your Dreams initiative gives design students real-world experience, working on live commercial briefs with mentoring from leading names at Gensler, CBRE, Squaredot, and more.

This year’s collaboration with Birmingham City University saw Textile Design students develop carpet concepts for the hospitality sector, and the results were outstanding. First place went to Holly Travis for her bold 70s-inspired design, now heading to production sample at Balsan HQ in France!

The campaign culminated in a showcase event, with work experience prizes and industry networking opportunities proving just how powerful education–industry collaboration can be.

We’re excited to share that Hypnos has brought its handcrafted comfort to the recently restored Langdale Chase Hotel on the shores of Lake Windermere.

Named one of The Times and Sunday Times’ top three places to stay in the UK for 2024 and winner of both North Hotel of the Year and Countryside Hotel of the Year, Langdale Chase combines historic character with modern comforts.

To ensure guests sleep just as well as they dine and relax, the hotel selected Hypnos Woolsleeper mattresses, made in the UK using 100% traceable British wool.

“Hypnos was a natural choice,” said General Manager Mike Vincent. “Their values around sustainability and craftsmanship mirror everything we stand for at Langdale Chase.”
