I would like share the best moist carrot cake recipe that I always use🤩 take note! 📝
🥕 Carrot Cake (Makes 8 slices)
Dry Ingredients
• 1 ½ cups plain flour
• ½ tsp ground cinnamon
• ½ tsp freshly grated nutmeg
• 1 tsp baking powder
• 1 tsp baking soda
• Just under 1 cup dark muscovado sugar (approx. ¾ cup tightly packed + a little extra)
Wet Ingredients
• ¾ cup vegetable oil
• 3 large eggs
Add-Ins
• 2 ¼ cups grated carrots
• ½ cup chopped walnuts

Cream Cheese Icing
• ¾ cup cream cheese
• 1 tbsp orange zest
• 1 tbsp orange juice
• 1 tsp vanilla extract
• 1 cup icing (powdered) sugar, sifted

🔸 Method
1. Set your oven to 150°C (300°F) and line a 15 cm / 6 inch square cake tin with baking paper. Lightly grease it and let it sit while you prepare the mixture.
2. In a large mixing bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and baking soda.
3. Add in the muscovado sugar and blend until evenly distributed.
4. In a separate bowl, beat the eggs with the oil, then pour this into the dry mixture. Stir gently until fully combined — don’t overmix.
5. Fold in the grated carrots and chopped walnuts. Scoop the batter into the prepared tin and bake for 1 hour 15 minutes, or until the top is springy and a skewer inserted into the middle comes out clean.
6. Let the cake cool in the tin for around 5 minutes, then transfer to a wire rack and allow it to cool completely.
7. For the icing, beat together cream cheese, orange zest, orange juice, and vanilla. Gradually mix in the sifted icing sugar until smooth and creamy.
8. Once fully cooled, spread the icing generously across the top and slice into squares to serve.

⭐ Optional Extra
For a sweeter, fruitier cake — add 1 medium apple (grated) and ¼ cup dried sultanas to the batter. If using dried fruit, soak briefly in warm water or tea to plump them up.
