Baked fish with tomatoes, onions, and herbs. This light and flavorful dish highlights the simplicity of Greek cuisine.

Ingredients
• 2 fish fillets (cod, haddock, or sea bass)
• 1 onion, sliced
• 2 cloves garlic, minced
• 1 can diced tomatoes
• ¼ cup olive oil
• Juice of 1 lemon
• ½ tsp dried oregano
• Salt and pepper to taste
• Fresh parsley, chopped

Instructions
1️⃣ Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
2️⃣ Sauté onions and garlic in olive oil until soft. Add tomatoes, lemon juice, oregano, salt, and pepper. Simmer for 10 minutes.
3️⃣ Place fish fillets in baking dish. Pour tomato mixture over fish.
4️⃣ Bake uncovered for 25–30 minutes, until fish is flaky.
5️⃣ Sprinkle with parsley and serve warm with crusty bread.
