Ingredients
2 pounds cow foot, cleaned and cut into bite-sized pieces
2 cups utazi leaves, shredded
1 cup onions, finely chopped
1/2 cup ugba (oil bean), sliced (optional)
2 tablespoons ground crayfish
2 tablespoons ground pepper
2 stock cubes
1 cup palm oil
Salt to taste

Instructions
Prepare Cow Foot: Clean the cow foot thoroughly and cut it into bite-sized pieces.
Boil Cow Foot: In a pot, boil the cow foot pieces with chopped onions, stock cubes, and salt until they are tender. Add water as needed to create a flavorful broth.
Prepare Utazi Leaves: Shred utazi leaves using a knife or mortar and pestle.
Add Palm Oil: In a separate pot, heat palm oil until it becomes clear. Be cautious not to overheat or burn the oil.
Season with Spices: Into the pot with heated palm oil, add ground crayfish, ground pepper, and crumbled stock cubes. Stir well to create a fragrant spice base.
Incorporate Utazi Leaves: Gradually add the shredded utazi leaves to the pot, stirring continuously to infuse their bitter flavor into the oil and spice mixture.
Add Cow Foot and Uba (Optional): Transfer the boiled cow foot pieces to the pot. If using ugba (oil bean), add it to the pot as well. Stir to coat the cow foot in the spicy oil.
Simmer: Let Nkwobi simmer for about 10-15 minutes, allowing the flavors to meld and the cow foot to absorb the spicy goodness.
Adjust Seasoning: Taste the dish and adjust the seasoning with salt if necessary.
Serve Hot: Nkwobi is traditionally served hot, with the spicy cow foot pieces coated in the flavorful oil and spice mixture.
