TIPS FOR A PERFECT PARTY JOLLOF RICE

1. Use more of Tatashe, Shombo and Onions with your tomatoes.

2. Don't forget to add Ginger, Garlic, shallots, Rosemary and curry Masala.

3. Use Rich meat or Chicken stock (the water you get after cooking your meat)

4. Add bay leaves (Remove it before serving)

5. Cover your pot tightly, i mean very tight. Use foil and seal your pot before placing the cover.

6. Cook on low heat, the steam is what you need to cook your rice.

5. When the rice is almost dry, add some sliced spring onions and spread some margarine on top for that extra flavour.

6. Finally, allow it to burn, to get that Smoky party jollof flavour.

Samoas Cookie Latte ☕🍫🥥✨
This indulgent iced latte combines all the flavors of your favorite Samoas cookie—dark chocolate, caramel, toasted coconut, and rich espresso—for a decadent treat!

Ingredients
For the Latte:
1 shot of espresso (or 1/4 cup strong brewed coffee) ☕
2 tbsp Samoas cookie butter (or use a mixture of caramel, coconut, and chocolate spreads if unavailable) 🍪
1 tbsp dark chocolate chips 🍫
1 tbsp caramel sauce 🍯
1 tbsp coconut flakes, toasted 🥥
3/4 cup milk (dairy or plant-based) 🥛
1 cup ice cubes 🧊
For the Topping:
Whipped cream 🍦
Additional caramel sauce for drizzling 🍯
Additional toasted coconut 🥥
Melted dark chocolate for drizzling 🍫
Instructions
1. Prepare the Base
Brew the espresso shot and pour it into a small bowl or mug while still hot.
Stir in the Samoas cookie butter, dark chocolate chips, caramel sauce, and toasted coconut flakes. Mix until smooth and the chocolate chips have melted.
2. Cool and Combine
Pour the espresso mixture into a shaker or jar.
Add the milk and ice cubes. Shake vigorously until frothy and chilled.
3. Assemble the Latte
Pour the shaken latte into a tall glass filled with fresh ice.
4. Add the Toppings
Top the latte with a generous swirl of whipped cream.

Nigerian Beans Porridge

Nigerian beans porridge is the definition of complete comfort and can be paired with garri (cassava flakes), bread or ogi (fermented, corn starch porridge)

Ingredients
4 cups Honey beans/ Nigerian brown beans/ Black eyed peas
¼ cup palm oil
4 Roma tomatoes
4 scotch bonnet peppers
1 Large red onion
1 Large bell pepper
5 tbsp Ground dried shrimp (aka cray fish) optional
3 tsp Shrimp bullion can be substituted with vegetable bullion if vegan
Salt to taste
Instructions
Rinse the beans and place in a deep pot with 7 cups of water.
Boil the beans on medium heat until it becomes soft, it could take about 40 mins. If you are using black eyed peas, it might take a little longer.
While the beans are boiling, blend the tomatoes, peppers, and onions and set aside
Once the beans are softened from boiling (do not drain the water), turn the heat down to low, the pour in the blended tomatoes into pot.
Allow the beans to cook for an additional 10 minutes with the tomatoes, then add in the crayfish, bullion and palm oil. Stir, and cook for another 10 minutes.
Season the beans with salt to your taste. Turn off the heat, and allow to sit for 5 minutes before serving
Notes
The beans tend to thicken once they cool. If you prefer your beans lighter, add a little more water an reheat.

How to make african Chicken Pie
The african Chicken pie - Stuffed with Minced Chicken (Ground Chicken), Potatoes and Carrots. The Nigerian Chicken pie pastry is the same as the pastry used for the Nigerian Meat pie, the only difference is the stuffing. Though I have posted a recipe for the Nigerian Meat pie but I decided to make another video recipe for the Nigerian Chicken Pie because I wanted to answer some of the questions I usually get about the Nigerian Pie pastry.

Ingredients
For the Filling:
1 Pound Ground Chicken
1 cup Potatoes Diced
3/4 cup Carrots Diced
1 Onion Small Diced
1/4 teaspoon Black Pepper
1/4 teaspoon Chilli Powder
1 Seasoning Cube
Salt To Taste
2 tablespoons Vegetable Oil
1/4 teaspoon Curry Powder
2 tablespoon Flour
1/2 cup Water
For the Pie Pastry
4 cups All Purpose Flour
140 g Butter 10 Tbsp
140 g Margarine 10 Tbsp
1 teaspoon Baking Powder
A Pinch of Salt
1/2 teaspoon Nutmeg optional
4-5 tablespoon Water or Milk
Instructions
For the Filling:
Preheat the cooking oil in a pan, add the diced onions and saute over medium heat stirring constantly until it until it becomes translucent.
Add the ground chicken (minced Chicken) and cook it until it's no longer pink - bout 5 minutes.
Add the seasoning cube, black pepper, chili powder and salt to taste together with the diced potatoes and carrots and leave to cook until the vegetables become tender.
In a small bowl, combine the flour and water. mix it together until the mixture is no longer lumpy.
Pour the mixture over the chicken pie filling and leave it to simmer for about a minute. The mixture will become thicker.
For the Pastry:
Mix the flour, salt, and baking powder together in a large bowl. Add the butter/margarine and use your hands to crumble the fat into the flour until it becomes crumbly.
Add the water, a little at a time until a slightly stiff but workable dough is formed.
Knead the dough for about a minute or even less, the lesser the better.
Cover it up with plastic wrap and place it in the fridge to chill for about 20 minutes. (skip this step if you don't want a super flaky pie).
Roll out the pastry dough to your desired thickness on a lightly floured work surface.
use a knife to cut into rectangles or circle of your desired size.
Fill the cut-out pastry with the chicken pie filling, but don't overfill so that you will be able to close the pie easily.
Crack and whisk one large egg inside a bowl and brush the edges of the pie pastry with the egg then, fold the dough over to close it up and crimp the edges with a fork.
Use the remaining whisked ggg to brush the surface of the Chicken Pie.
Use a fork to prick the surface of the pie about two or three times and place the pies in a parchment-lined baking sheet.
Bake in a 350°F preheated oven for 20 to 25 minutes or until golden brown. Enjoy!

How to o prepare pepper soup spices

Ingredients: 👇👇
Aiden fruit, negro pepper, Coco plum, red chilli pepper, uziza seed, dry ginger, dry garlic, dry coriander seeds, fried ehuru, nutmeg, alligator pepper, dry prawns

Preparation :-
Grind all together into a smooth powder form. My pepper soup spice is ready.
Store in jar and use for your pepper soup

NOTE :- when preparing, if you are using 1/2 cup of other ingredients, ginger, garlic should be 2 cups each . Tumeric 1 cup. then Aiden fruit should be half of the big one . Nutmeg 2. while chilli pepper and dry prawns should also be 2cups each. This is how I love it 🥰😋😋😋

Peanut Soup recipe

INGREDIENTS
4 cups low-sodium vegetable broth
2 cups water
1 medium red onion, chopped
2 tablespoons peeled and minced fresh ginger
4 cloves garlic, minced
1 teaspoon salt
1 bunch collard greens (or kale), ribs removed and leaves chopped into 1-inch strips
¾ cup unsalted peanut butter (chunky or smooth)
½ cup tomato paste*
Hot sauce, like sriracha (AKA rooster sauce)
¼ cup roughly chopped peanuts, for garnish
Cooked brown rice, for serving (optional)
INSTRUCTIONS
Combine the broth and water in a medium Dutch oven or stock pot. Bring the mixture to a boil, then add the onion, ginger, garlic and salt. Cook on medium-low heat for 20 minutes.
In a medium-sized, heat-safe mixing bowl, combine the peanut butter and tomato paste, then transfer 1 to 2 cups of the hot stock to the bowl. Whisk the mixture together until smooth, then pour the peanut mixture back into the soup and mix well. Stir in the collard greens and season the soup with hot sauce to taste.
Simmer for about 15 more minutes on medium-low heat, stirring often. Season with additional salt or hot sauce if desired. Serve over cooked brown rice if you’d like, and top with a sprinkle of chopped peanuts.

4 1/2-5 Cups Bread Flour/All- purpose flour (plus more for dusting)
2 1/4 Teaspoons Active Yeast (1 packet)
1/4 Cup Sugar
1/2 Cup Water
1 1/2 Cup Whole milk
2 Tablespoons Butter
1 Large Egg
1 Teaspoon Salt
1/2 Teaspoon Ascorbic acid (Vitamin C)

Instructions

Proof yeast: In a small bowl, dissolve yeast in warm water, sprinkle a little sugar over it, and set aside for about 5 minutes or until it foams. If you're using instant yeast you don't need to proof the yeast, just add it to the flour directly.
Sift flour in a large bowl, add sugar, salt, and vitamin c, and mix.
In a small bowl, melt butter beat egg into it, add milk and whisk together.
Mix wet ingredients with dry ingredients; mix flour, yeast, and egg mixture to make a soft dough. You can use a stand mixer or an electric hand mixer for the process. Sprinkle more flour if you need to because the humidity in your kitchen will determine if you need to add more or less. Start adding flour from 4.5 cups of flour then add more as you continue.
If you're using a mixer after you've with dough mixing, transfer the dough onto a floured surface and knead until the dough smoothes and elastic. Or just mix until dough is stretchy and elastic; that's the key to making bread. As a matter of fact, if you don't use egg and milk and knead the dough very well you would get a very good end result.
Grease a bowl and place the dough in it. Cover and put in a warm place to rise until it doubled. About 1- 1.5 hours.
Grease the baking pan and set it aside. Bring the dough out.
Deflate the dough and place on a floured surface knead the dough for about 5 minutes.
Cut into two and form each dough into a loaf shape and place in the greased baking pan.
Brush melted butter on the dough and cover with a clean kitchen towel and place in a warm place to rise the second time for about 1 hour.
Preheat the oven to 350 degrees F for about 10 - 15 minutes. Place the dough into the oven and bake for about 25 -30 minutes.
Bring the bread out and brush melted butter and keep warm.

Enjoy.
Serve with mashed beans. Enjoy.

Ingredients

2 pounds cow foot, cleaned and cut into bite-sized pieces

2 cups utazi leaves, shredded

1 cup onions, finely chopped

1/2 cup ugba (oil bean), sliced (optional)

2 tablespoons ground crayfish

2 tablespoons ground pepper

2 stock cubes

1 cup palm oil

Salt to taste

Supplementary Materials

Mortar and pestle (for pounding utazi leaves)

Instructions

Prepare Cow Foot: Clean the cow foot thoroughly and cut it into bite-sized pieces.

Boil Cow Foot: In a pot, boil the cow foot pieces with chopped onions, stock cubes, and salt until they are tender. Add water as needed to create a flavorful broth.

Prepare Utazi Leaves: Shred utazi leaves using a knife or mortar and pestle.

Add Palm Oil: In a separate pot, heat palm oil until it becomes clear. Be cautious not to overheat or burn the oil.

Season with Spices: Into the pot with heated palm oil, add ground crayfish, ground pepper, and crumbled stock cubes. Stir well to create a fragrant spice base.

Incorporate Utazi Leaves: Gradually add the shredded utazi leaves to the pot, stirring continuously to infuse their bitter flavor into the oil and spice mixture.

Add Cow Foot and Uba (Optional): Transfer the boiled cow foot pieces to the pot. If using ugba (oil bean), add it to the pot as well. Stir to coat the cow foot in the spicy oil.

Simmer: Let Nkwobi simmer for about 10-15 minutes, allowing the flavors to meld and the cow foot to absorb the spicy goodness.

Adjust Seasoning: Taste the dish and adjust the seasoning with salt if necessary.

Serve Hot: Nkwobi is traditionally served hot, with the spicy cow foot pieces coated in the flavorful oil and spice mixture.
